    Braised Egg Tofu w/ Mixed Mushrooms 菌菇豆腐煲 Chinese Tofu Mushroom Recipe
    Ingredients:
    Serves 4 pax

    400g egg tofu
    2 chopped shallots
    4 dried Chinese mushrooms (rehydrated & cut in halves)
    3 cloves chopped garlic
    300g enoki mushrooms
    100g shimeiji mushrooms
    2 tablespoons oyster sauce
    2 tablespoons light soy sauce sauce
    0.5 chicken stock powder
    500ml (16.9 fl oz) water
    0.5 teaspoon sugar
    1 tablespoon premium dark soy sauce
    1 teaspoon salt (or to taste)
    Some cornstarch solution
    1 beaten egg
    1 tablespoon sesame oil

    Dark soy sauce amzn.to/3q9bXoW (we've never tried this brand before so you gotta trial and error until you find a good premium dark soy sauce. The one we use has a really nice consistency - it's not too thick but not too watery. It's also not too salty and has a slight tinge of sweetness. The main purpose of dark soy sauce is to give your dish a dark colour with a really nice caramel taste)
