    Thank you so much. Just made this a while ago. So much work and dedication has to be put into making this so really kudos to all Koreans who has to make such. My husband absolutely loved it-he couldnt wait til it ferments😅. Thanks again!

    Imagine my delight when after watching several of your videos (beginning with Bibimbap), I found one of my favorite Bible verses at the end of your recipe for Napa Cabbage Kimchi! You are a delightful instructor AND a sister in Messiah! I will bookmark your channel for further learning about Korean cooking and for refreshment for my spirit. :^)

    yes.. the water kimchi name is... dongchimi...and dongchimiguksu is.. you use that water kimchi to make some kind of noodle dish.. I will add both of them to my list.. :)

    for clear and refreshing flavor.. I will prefer to use salt instead of fish sauce... if you still want to use.. instead of the salt I added to the kimchi broth.. (water).. you can add some fish sauce depending on your taste.

    It is 1 gallon jar.. so I filled all my water kimchi (the yield is 1 gallon) ^^

    Thank you so much for your Kimchi recipe Aeris, I wish you will show us more varieties of kimchi, such as those dried fish kimchi :-) I once tried that in Seoul and that was amazing!!!

    Hi, I hope you enjoy your water kimchi. Next time, if you don't have Asian pear.. you can use sweet apple like fuzi or red delicious instead. :)

      Oh no worries.. it can be nice thing to enjoy your cool water kimchi with the ice.. you can just eat the kimchi as it is.. maybe your refrigerator temperature is low.. mine is like too.

      yeah i studied it, koreans do have frozen kimchi, and lactobacteries will survive maybe 1-10% of them.
      only one side was frozen, well, the taste is good anyway, but I provide it for medical emergencies.

    But question, is fermented food healthy for you? Cuz I heard pickled food aren't that healthy?

      +Dreamer Yes.. fermented food is healthy.. the reason pickled food is not good is.. because of the chemical they add for picking I think.. thanks ^^

      They say yogurt is good for you, and yogurt is fermented. ^^ I think the bacteria helps with digestion. However, if you're not used to eating fermented foods, it may upset your digestive system at first if you are sensitive, but your body should get used to it. I've also recently heard that fermented foods, like pickles, are good for anxiety. ^^
