      + Peter lee he has had lots of practice to do what he did, but the basic concept is the same as the classic french method of omelette making.
      high heat, constantly move the curds and then once you have enough "skin" of the omelette fold both halves towards the center and flip it over to close the omelette on its seam at the end of the curve of the pan leaving it semi runny and plenty of cooked curds in the middle.

      I recommend looking for the jacque pepin omelette video, he literally wrote the book on french cooking technique.
      I have tried to do it but I'm too uncoordinated to pull it off.

      +Christmas Crustacean but the french do it on medium-low heat. You are right about the technique though. In other words this is a french omelette, done super fast, so you'd have to be very agile. Both this and Pepin's still amaze me every time I watch them.

      ​@@drmanjunath09 It's kinda like a mix of poached egg with scrambled egg, combine with rice it makes the rice softer and more of a porridge type of dish. How it tastes depends on each person and their seasoning though.

      It is a book well worth writing. I am doing my own version for FaceBook and it has taken me four days with a lot of mysteries to deal with. I had to by new cookware to deal with the omelet and will be singing the theme song to prevent me from taking 3 months to master it.
      Hell, it regards to Japanese cooking, it took me two years to get the dried fermented fish to make proper dashi.

    Update! I finally done it... my first success this morning, however one side opened the other side needed some coaxing. I did have it in a bowl so that's why so gravity effect is important, but if it were on a plate it would opened completely without assistance. I'm just proud to have made the omelet correctly.

      Definitely not healthy, but extremely delicious. Although I think the best thing I had in Japan was Okonomiyaki. Again, not all that healthy.

      Okonomiyaki is pretty much a ton of cabbage. It's vastly healthier than any kind of fast food you'd be served in the west.
      Keep in mind that what constitutes as healthy and unhealthy is _only_ dependent on the dosage. Water becomes deadly once you drink more than about 4 liters within less than an hour.

    I’ve been searching on how to cook omurice after watching Rin Okumura made some (Ao No Exorcist everyone) and it looked so heavenly and when I saw this and it opened like the sky has parted for the angels and totally nailed what Rin made, I just want to try this omurice or make it my life goal to go to Japan if I can’t recreate this goodness. I just have to learn how to use chopsticks to properly stir the egg and have consistency.
    Also, The egg is cooked. It’s a far cry from beaten raw egg. Have you guys seen a beaten raw egg? Have tried beating a raw egg?

      Bro, you're thinking too much. Spray the pan with pam so it doesn't stick, and cook it quickly while folding it into a blanket (that's why the inside is raw, duh). The bottom gets cooked, but you don't flip the entire omelet over, so the top stays raw. You just have to cook it quickly so the inside doesn't cook as well.

      95ellington I tried making it just now (it is currently 3am... talk about cravings) and thought I would fail but it worked out perfect. A wok really helps because of the curved sides that creates that nice pocket. Just follow this:
      1) Aggressively mix/fold the outside of the egg into the centre when you first pour it into the pan so that the whole circle is somewhat even
      2) Once the egg starts to set a little bit (don't overcook) fold in one side of the circle to the other with chopsticks (don't worry if it breaks, since it's still pretty raw it will set itself into a nice shape) to create a hemisphere like shape
      3) tilt the pan back and forth (keeping the egg pocket on the edge of the pan) to create that oblong shape with pointed ends
      4) flip it fully over once, and then leave it to set so the 'edges' of the pocket can seal. (I left it to cook a little longer since I don't like my eggs THIS raw)
      5) transfer to rice, cut, enjoy your masterpiece
      Oh and try using butter instead of pan. it gives that cheesy flavour to the egg

      Fellowship of the Drink In the description, she links to her blog post about it. In the blog she says it cost 2,500 yen. 2,500 yen is roughly $25 USD. (Exact dollar amount with current exchange rate as of 04/2014: 24.50 USD)

      ArtieKirkland Japanese food standards is just that high. If you go to their grocery, the fruits are like $100 EACH because of its quality. Same goes with cooking, they are allowed to prize it so high since its made at a very difficult skill.
      ...I find the standards reasonable since it makes the workers more hard working and intelligent.
      Meanwhile in America, its the opposite. Like every other country, the states sell what ever they can sell doesn't matter how it look like or if it had meat glue, or damages.
      ...if your basing your judgment base on American standard, that just mean you don't know the difference in the standards.

      mvpmickey1 Um, only certain fruit are $100 each - not every fruit. You can get plenty of fruit much cheaper (couple of dollars).
      As well, you can eat great meals around Japan for 10 dollars or less. (Heck, they have sushi plates for $1 each!!!) And you can get Omurice for $12 in some places.
      So yeah, no...
      I'm not saying they don't have better quality food than America - since a lot of American food isn't actually food at all... However, I'm saying that $25 for an omurice still seems pretty up there. That said, I would still pay the price if it looked this good.
