I learned how to smoke fish when I was a kid with a little chief smoker and I have been a fan boy ever since. Fish is my all time favorite for this smoker but jerky is also great. I did London broil jerky the other day.
I just received a replacement for my old front load. Love the big chief and smokehouse products. Burned my last one out (burned the bottom right out of it!). Recommend these smokers to everyone!
My father gave me his Big Chief :) Tradition passes on! But... I have lots of wood chunks - can I use them vs the chips? Do I need to soak my chunks in water?
If they are small chunks like large bark chips. Do not soak your chips. This is a low wattage unit if you soak your chips they have to dry before they can start smoking which will put a lot of moisture on the outside of you meat thus causing the smoke to stick to the outside of your meat.
Just got mine 2 days ago and tried today my first batch of beef jerky. Tastes good but smoked too quick! In about 1 hour I already burned 2 1\2 pans of wood chips... is it a way to do slow smoking with this product? Seems like in 12 hours I'll have to burn a loooot of wood chips . Thank you!
There are different sized wood chips for this reason. Some foods absorb smoke much more easily than others. You can get chunks instead of chips to smoke slower. Or sawdust instead of chips if you want it to smoke faster
I have seen a couple of vidoes on smoking cheese in the big chief, seems like you dont full close the door and just prop it up against it so it dont get hpt enough to melt cheese. But uea theser are a few vidoes out there

I wondered if the Big Chief would get the internal Temp hot enough to 160-165 deg for making summer sausage ...??

Long shot since this was posted so long ago but can you smoke cheese in this? There’s no temperature control hey?

Soooo you cant adjust the heat at all.. sooo its a really expensive jerky box. ya ok.
Is there a flavor pan replacement? I don't have one
Go to your local thrift shop and get a small cooking pan ,that's what I did , works great , super cheap , $3
