Best pizza I've ever had was in Florence, just off the Piazza della Signoria. Thin crust, very basic, margarita, delizioso. Not sure if it was Roman or its own variety. Many years ago. Second best thing about it was that it was free, as one of us had a good friend in common so it was on the house. The grappa didn't hurt. 😄
I thought Mary Jane was doing a full blown impression of Meg Ryan in Katz’s when she tasted the pizza in Gino Sorbillo’s. She was so engrossed in the moment 😳. I’ve added them to my list to pick from when I get to the big Apple, hopefully next September 🤞🏻🙏🤞🏻

1. What she says about the rise time of NY vs Neapolitan pizza is not accurate. NY pizza is generally cold fermented (in the fridge) for 2 days. Neapolitan is usually anywhere from 8-24 hours at room temperature. Neither are naturally fermented they both use bakers yeast, but you are finding more Sourdough "naturally leavened" Pizza places in America as it is trendy. You will not find this in Naples because they are much more strict in preparation. 2. The tomatoes grown in California are also Volcanic, in fact most of the northern west coast of the US has volcanic soil. 3. Buffalo Mozz is always cooked in Naples. Maybe in northern part of Italy not, but traditionally it is.
Whhy, in myyy dayyy young man Ariel pizza parlors served coke (no Pepsi, coke), think of the movie "The French Connection". Digression: Jeff Scher's "Prisoners of Inertia", Scorsese's bookend movies "After Hours" & "Bringing Out the Dead", are other period NYC movies. When Demme's "Something Wild" came out video stores had a 'New York City Romantic Comedy' section next to the still popular "The Warriors". Late in seeing your phenomenal body of work. Enjoy them. I Love all American and/or Italian-style pizzas, but putting pineapple, corn, candy and/or ketchup on pizza should be punishable with prison time and fines! (Seriously, who came up with these 'ideas' and WHY are they not a crime???)
NYC pizza is its own thing, perhaps closest to Neopolitan but still different. Thicker, chewier and more glutenous crust, more cheese and shredded, also more tomato sauce, which is thinner. You can't eat it while it's hot, unlike pizzas that have less or thicker sauce. They're all good, just different. Personally my favorite is Sicilian, with a Dr. Pepper.
