my lola (grandma in tagalog) actually used to have an arroz caldo business before that helped her raise my mom and her siblings and she taught us how to cook it as well. she said to achieve that kind of texture i think its important to continuously stir the dish while making it. i hope you enjoy your stay here!!!

In Cantonese congee, I use a whisk to break up the rice after cooking 15 minutes to make a soupier consistency! Then I continue to cook. Also use glutinous rice!
Flew PAL business class from LAX to Manila. Broken seat on flight there, broken entertainment system on flight back. Airplane was old and poorly maintained. Food was not great. Crew was friendly though.
Since they travel a lot they probably have travel credit cards that they earn points and loyalty rewards so they get free or discounted upgrades. There are ways to get into business class with out paying a fortune.
I’ve known people to use broken rice instead of whole grain, which could give it more of that look. When I cook it. I use whole grain. My mom sometimes mixes a little sweet rice with whole grain which gives it a thicker consistency.

Visayan Arroz Caldo is mostly soup, less rice and we used native chicken to make it. Lots of garlic, ginger , spring onions and lemon grass. Let the rice bloom. 😊

i believe sometime they use the food processor stick to sort of break down the rice granules - in my opinion only from eating on chinese congeee to get the more “blended” texture i never can achieve the same texture at home either
I saw your arroz caldo video and I am intrigued to try it! It looks like it would be similar to asopao (asopado) (which is a soupy rice with chicken so fire with a slice of avocado 🥑😮💨🤤) it’s like a paella vibe but not with seafood. 😅. Love yours and Judy’s channel been following since before Julianna was born! I flew PAL for the first time in 2018 (we usually take Asiana or Korean Air), and I was surprised how good even the Economy meals were, lol. They had the most flavorful, succulent pork liempo I've ever tasted that it became a core memory for me.
Also, Auro is a really good Filipino chocolate brand. I'm not vegan, but it doesn't even taste vegan. I recommend their White Chocolate Calamansi Pie flavor, but their regular flavor is good too. You can get them online or your local Island Pacific (idk if they have IP in Washington).
I use equal parts of Jasmine Rice and Glutinous Rice. Some recipes uses only glutinous rice.. It gives it more thicker texture.. I think PAL’s recipe didn’t use too much rice tho :)
If this was an American flight….you would have gotten a boiled egg for breakfast, a peanut butter and jelly sandwich for lunch, and Campbell’s chicken noodle soup for dinner🫠
I was just catching up with the vlogs. Typically arrozcaldo is cooked with regular rice and glutinous rice - combined hence the texture difference from Judy's arrozcaldo
7:27 it's because we use "malagkit" rice which disintegrates over time while releasing starch, hence the thicker and goopier texture of arroz caldo. That's how it is usually cooked here in the PH
nope, that’s just how it’s mostly cooked, some people stop at that point when the rice is cooked like you how you would using a rice cooker, but mostly we cook it up to that point where the rice has split up - also that happens when you leave it at the pot as the residual heat continues to cook the rice, that’s why you have to put a little bit more water because it will always thicken up the more you heat it up

That consistency is the same that we do for congee. I really like how it almost becomes a milky taste.
