Sharla, if you don't mind me asking, what with all of your somewhat unusual food allergies, has anyone ever attempted to "prove" that you were lying by sneaking one of those foods into your meal? I only ask because it's happened to me and I live in the same little corner of the world as you two.
No, but Christie accidentally gave me food with celery seed in it and we were certainly able to know that the allergy still stands! We joke that she accidentally poisoned me. I’m sorry to hear that that’s happened to you though. Totally unacceptable.

Being from Philly I can’t imagine Cheesesteaks being prepared at home and frozen. I think I saw frozen ones being sold, along with chicken cheesesteaks, on QVC at some point in time. I think I would do the classic first. The onions and peppers are cooked on the side in if at home so it absorbs the flavor of the steak. If you have a real wet sauce, I forget what you said, well that sounds like Au Jus. If you do peppers and onions they should be on bottom or top of roll and not all mixed in, makes a difference trust me. You’re making me want to research and see how to make and freeze. Not sure why cause I can get the real deal anytime. Or you can come to Philly to do the research 😂😂😂. Happy to show you the best places for Cheesesteaks. You know, thinking on it, you could do the cheesesteak with the Italian gravy (red sauce) and provolone. Love that for a change up and I love cheesesteak hoagies. We now have Cheesesteak egg rolls. Not bad but I like my Italian cheesesteak. The Italians brought lots of foods to Philly. We have better than NY, in my opinion.

My family has pork, mushroom, and soy allergies. I can sub coconut aminos for the soy sauce, omit the mushrooms, but what do I sub for the pork? Chicken or beef? and which one would give us the taste closest to the pork?

When I read their recipe, below it there are tips. One of the tips was to use boneless, skinless chicken breasts or thighs instead of pork. :)
I would say chicken would be fine. Those are a lot of allergies to dodge! It sounds like you have a good handle on adapting re recipes!
