Mom of 10 ❤️ How I Meal Plan (A Month of Meals...) Healthy, Quick, Economical

- Опубліковано 23 жов 2023
- In this video I share how our current meal plan has come about. (From the early college years to how we live now with 10 kids.) I have to be very thoughtful about how I plan the meals and I can't just wing it anymore. I also don't want to waste any food! This family runs on its stomach and I want to keep all those bellies full! #largefamilylife #largefamilylogistics
You need to get a deep freezer and start prepping freezer meal. For example Cook 10lbs of ground chuck at a time then section it out for future meals. Only Season at this time with salt and pepper. Season it for the desired meal when you thaw it. This way you can use it in any recipe.
If you’ve followed them for a while, you’ll know that they don’t have room for a deep freezer in their home. Space is extremely limited!
At 62 yrs old and a very small household, I just wanted to say that I thoroughly enjoy your videos. Thank you for sharing your life here on UA-cam.
Aw Thank You So much!🙏🥰❤️
While raising 5 children and working full time, on Sunday’s, I would make some kind of roast, a pot of meatballs and sauce, maybe a soup, this way, during the week, I’d just make sides and we had healthy meals
I wish I was better at meal planning. It’s just my husband and I and he is pickier than most kids. So I despise cooking. We eat a lot of sandwiches! I love how you support Naomi’s love 💕 of cooking and baking. Learning to cook and bake is a wonderful education! She is so talented!
Yes I understand! Thankfully Marc likes most things. He doesn’t like shrimp, shellfish or lobster. But I don’t make those often lol…😅
@@TheHappyCaravan oh my husband won’t eat vegetables, beef (except ground beef) most pork, spaghetti noodles, etc. He wants junk food like fish sticks, frozen pizza rolls, tacos, ketchup sandwiches (ketchup and bread), etc. I also wanted to say Naomi is getting lessons in math and chemistry by cooking and baking.
@@debraridpath5674I'm a picky eater I like all the foods u said😂
Intention is everything. You have a good system that works for you. Home made food every day. I love how the kids gather around when you are cooking. I too will miss the basil. Take it easy , we all want a take home baby for you. Do the easiest possible way and put your feet up.
❤️❤️🙏
It’s a huge job planning and cooking for your large family. I had 4 sons and that was hard enough with also working full time as a nurse.
Yes! I definitely noticed it was more of a challenge after the kids came along!
I love your tips on spreading things out, knowing they will still be good after a few months❤ I think you do a fantastic job serving up nutritious, tasty meals for your family. 🙏❣️
❤️🙏
You are a great mom❣️I applaud your ability to plan and budget your meals. Love watching your channel.
❤️🙏🥰
My kids love Italian Wedding soup - I make it in the Instant Pot. First I make turkey meatballs from scratch (easy) and then I use an Instant Pot Italian Wedding Soup recipe - - lots of parmesan on top. And my family loves your channel!! Thank you for inspiring me (as a mom) and my kiddos (cello players, future homeschooling moms, guitar player). My daughters are inspired to have a big family like yours and I think that is so sweet. You are doing a great job :)
I’m amazed at your planning, I find it overwhelming thinking about meals for 4 sometimes 5 people and often take ideas from you. Your a braver person than me. Love your videos
❤️🙏🙏
Wow! I feel like you did this video just for me!! I had requested a couple of weeks back how you did your meal planning and make shopping lists, etc. This was so interesting to me! You are such an amazing lady, mom, wife, etc. And now you are about to do all of this with a newborn! Much love xo
🙏🙏🙏❤️
Beans and sausage soup, stuffed cabbage soup, beef stew, chili, chicken soup. These are all good crockpot meals
I love seeing how others plan and shop for meals. My husband and I grocery shop together and go every two weeks. I make a two week meal plan after checking our freezer and pantry and then make a list of exactly what we need to make those meals. I used to spend so much time worrying all the way home from work about what I would make for dinner only to get home and realize I was missing an ingredient. Planning meals and writing everything down that we need assures me that we have everything needed. Thanks for sharing your meal planning with us. I love seeing your "what we eat in a week" videos. Take care and God bless.
Interesting video! I like how you mix the meals up every week. In the school lunch room the pizza they served was always a hit. Thank you for the video! 🙏❤
❤️🙏Yes! Pizza was everyone’s favorite day🙌🏼
Moses living the life..bottle and a comfy bed😊. I don't meal plan too much since it's just myself to cook for, but you and Marc do such a great job of planning, cooking, and shopping!!
❤️🙏🥰 Haha yes! Mo was comfy!
I enjoy your weekly meal vlog and this meal planning video is intriguing
🙏❤️
Such school lunch memories. As being raised in California, I'm right there with you, remembering it the same. I liked the pudding cups to take for lunches.
Yes! I think my mom gave me pudding cups too!
I know what you mean about the same lunch for a kid. My son took a Turkey sandwich on a Kaiser roll every day with a small bag of chips.
I don’t do meal planning, per se. But when I make my grocery list I write 3 meals I can make during the week. Then I make sure to buy the ingredients. I guess that’s meal planning. But as I said it’s just 3 days. The other days I wing it.😊
That’s a good idea! If you have leftovers especially because then you probably use everything you make.👍🏼
I applaud you for your meal planning! My planning comes from opening the freezer in the morning and deciding what to make! I'm not cooking for 12 people either! I just love you guys been watching for little over a year and look forward to your videos.
🙏❤️🥰
Sloppy joes with hamburger buns as a change to hamburgers. I put niblet corn in it. Super easy and yummy lunch (or dinner).
Crockpot Mississippi roast recipe is wonderful. Must try!
This was very helpful and interesting to watch! I don't have any children yet but I am inspired by how you and mark run your household and manage all the cooking and feeding of so many kids :) you have a beautiful family
❤️🥰🙏
Thank you for your videos!
Beef stew might be nice this winter😊 I think Costco sells trays of stew meat.
Have a great week❤
Yes! That’s a good idea! I used to make a crock pot version that the kids loved. It definitely is a good fall weather food.🥰🍁🍂
The salty marshmallow has an easy IP version that I make for my family of 10!
I find it hard to cook for the two of us. I love to look at videos like this as it gives me ideas of what I can try. Thanks for posting this.
I love watching menu planning/weekly meal videos because it gives me great ideas. I only have 1 kid but even so, I get myself into trouble when I wing it. I tend to forget about lunches/easy grab items for work! We have food, but not thought out when we are on the go. I need to start printing recipes out. My mom would date them & make notes about who liked it & modifications. Fun to look back on!
Try making baked ziti. It’s ziti with ground beef sauce, ricotta or cottage cheese, and mozzarella. All mixed together, baked and eat. One Sunday after church you need to visit little Italy in the Bronx. Be prepared to buy real grated cheese, home made pasta, the best pastries and cookies around. Wish you well.
Our family of 10, we often do an Instant pot lentil stew. It feeds a crowd and is so delicious, economical, healthy and easy.
Thank you for sharing. This is a great idea for large families or for the working mom/dad. We all cook the same things now to write it all down into weekly/ monthly menus
Hi there, enjoy your videos I have a lentil soup you'll love. Here goes
1 1/2 lbs turkey sausage
1lg onion chopped
4 carrots peeled and chopped
1stalks celery chopped
4 cloves garlic minced
2 cups dry lentils
1 28oz can san marzano whole tomatoes
12 cups vegetable stock or chicken stock
1bag fresh baby spinach
1/2 tsp thyme, oregano and basil
Sautee turkey ( you can remove the casing)
1 cup raisins
Next add vegetables and sautee
Add rinsed lentils
Add all the stock
Add raisins
Simmer til lentils are tender
Add spinach and turn soup off
Serve with Crusty bread and parmesan cheese.
Let me know if you enjoy it.
Thank you!❤️🙏
Helpful information. Thanks!
You actually have to plan for 2 months in a month, because you make 2 big meals a day. Your meals are not cheap either. You and Marc always make healthy meals. I would be pulling my hair out having to figure out what meals to cook, because of the prices there in NY. Anyway, the two of you do a wonderful job feeding your children.
I love your what I cook in a week. You inspire me to try new meals!
That is a really good idea, especially doing a 4 week plan, but also being flexible with it. It’s helpfu doing a plan even when you live on your own. I’m just not very consistent doing it. You have inspired me to try again.
Amber thank you I appreciate your ideas and help with meal planning. I’m a widow and a prickly eater. So I tend to eat the same things over and over again.
If your family likes stuffed peppers the stuffed pepper soup makes a lot of portions and tastes like stuffed peppers, The ingredients are everything you purchase at Costco.
I commend your organizational skills! Wow!
A great video!!!!😊
I notice your family eats lots of soups, I would recommend you guys to try a Mexican soup called albóndigas. It's very delicious!
Very impressive list! 2nd of 8 siblings here, still don't know how we didn't starve!! I loved school cafeteria lunches. The only meal we got daily that was what I would call balanced. 1st time I had fried shrimp.
Yes! That’s a good idea! We don’t usually have a ton of leftovers but there are usually some!
That is how I came upon your family’s channel, through the lentil soup video ;)
Love your videos !!!!! Xo thanks for sharing these meal planning
Super helpful. I really enjoy your content and I agree, you are definitely growing in confidence YOURE DOING GREAT! Thanks so much for sharing. Stay safe ❤
Aw Thank You!❤️🙏🥰
Hi Amber, I love to cook and I miss having my children at home to cook for! I wish I could come cook for you for a week! That would be so fun!
Here are some ideas. Chicken & dumplings, meatloaf, Swedish meatballs over noodles or rice, sloppy joes, salmon Pattys made with canned salmon! Stir fry over rice.
Thank you for the ideas!❤️
I love your videos! I especially enjoy hearing the kids play, what talent! It’s a real blessing to hear! Have you ever tried making a gumbo? There are lots of variations and it’s a pretty cheap way to feed a crowd. We also make soup beans and serve them over rice and eat cornbread on the side. It is literally whatever beans you prefer, with plenty of onions and garlic, seasoning to taste and a lot of broth to make it “soupy”. This is a staple at our house!
Wow yes! I’ve heard gumbo is good! Definitely want to try that!❤️
I also cook 10lb or more of chicken at a time, I make 4 pork tenderloins at a time, etc. Then I have cooked protein ready to go for any meal. Makes life much easier.
Also make large amounts of chili and chicken soup. It freezes great!!!!! Then you just take out what you need and thaw and heat.
Hard work for a large family to prep and shop for food 💯✅
I really like how you have that organized. I’m trying to make lists of meals based on the season and what is in season. But i think I’ll just organize that list like you have yours because sometimes it’s hard to pick out of just a big list. 5 options for each day sounds better
Thank you❤❤❤i love your advise...everything u do is so great..just wanted to say that....way cool vid
I’m so impressed by your regular meal planning and list making for Costco and T Joes . Naomi is such a natural cook/ baker but I’ve seen Elijah helping out too- great!! I’ve just made Jamie Oliver’s Minestrone soup recently and going to try his Chickpea and Leek soup too which you make yourselves. Thanks so much for your inspiration, Amber and Marc 🧑🏼🦳👍⭐️💚
Aw Thank You so much!❤️
Great job.thanks.
Thanks for sharing a background story . I recommend Bahn Mi - healthy and delicious! Besides pork you can use other protein topping too .
Glad your kids are happy with simple meals . Less stress for you 😊
Yes! The kids really enjoyed that! We made it a couple of times and they thought it was really good.
Hi Amber. Thanks for the meal plan information it was helpful and I appreciate your input. Although, it’s just me I am working on not wasting food by cooking and eating enough for me. But, That’s a great idea you shared on how to switch things up. Always enjoy your videos thanks for sharing your experiences and take care.
Try Greek food to feed a crowd healthy; stuffed peppers, pastechio, stewed green beans, spinach pie, etc.
Yes! Thank you for the idea. We do make lamb kebabs with Greek salad but the spinach pie would be amazing!
Try white chicken chili it good and tasty especially since it getting cold.❤❤❤💕
You do a wonderful job❤
❤️🙏
Wow I love your videos!!!
❤️🙏
I was wondering how in the world you did your shopping list for so many people. Now I see the high level of organization you follow. Question, which one or two substitutes for menue/shopping list you are training?, in case of emergency? I have to tell you how very much I thoroughly enjoy spending time with your family. Your videos are so enjoyable for me. I am borrowing from your recipes and the music is fabulous. I never miss them and have seen everyone of the older music videos many times, and some of The Happy Caravan videos more than once. God bless and hearts to all of you.🎉❤🎉
We make big batches of pesto and freeze it in ice cube trays and then throw the cubes of pesto in Ziploc freezer bags to use through the winter
Wow that's alot of planning I love the way you do your planning lots of hugs and love to you all sweet dearest friends The Happy Caravan 😊 ❤️
Thank you Sarah!!❤️🙏🥰
@TheHappyCaravan your welcome sweet dearest friends The Happy Caravan 😊 ❤️
Yep pizza was classified as a vegetable on the school lunch menu and it was not nutritious at all haha. We grow a large amount of our produce and I love getting meal inspiration from you that incorporates so many veggies
Very good video
I have a dinner reccomendatiin for you. Its pasticio which is a greek lasagna. Instead of the traditional lasagna noodles you use penne or ziti pasta and it has a lovely bechemel sauce on top. Its quite a filling dish and cann feed quite a crowd. God bless!
I recommend the same dish.😊
That sounds good!
thanks for the realistic video and a menu notebook looking like a normal person's 😊 I become uninterested when other youtuber moms show these "over the top" meal planners, with bows and decorations, which makes me suspicious: is their family just a hired group for youtube? 😂 cause madam, how do you have so much time otherwise 😄
Haha yes we are very normal around here!😅❤️
Pesto will fit flat in ziplocks in you freezer. I just blend with olive oil and lemon and add parm When I use it . I just harvested a ton
Great planning skills! You should write a book one day.
❤️🙏
hmmmm.
Maybe more potatoes/sweet, red, etc.
In New Mexico we eat chicken enchilada casserole .
Layer like lasagna:
corn tortillas
cheese
chicken w/ cream chicken soup
green chilies (mild)
make 2-3 layers.
bake 350 for 40 min.
Sounds yummy!
If you want to make spaghetti and meat sauce. Try making a bolognese sauce. It’s ground meat, carrots, onions, tomato sauce…. There’s many recipes online. It’s a very tasty meat sauce….
Easy side to feed a crowd
Instapot garlic/parm noodles
1 pound spaghetti noodles
1Tbs butter
4 cups chicken stock
Salt
4 cloves garlic
Cook one minute, natural release 12 minutes
When done add
3/4 cup Parm
Parsley
2 Tbs butter
That sounds yummy! Sometimes we go camping in the trailer and I make plain old noodles in the instant pot. That sounds way yummier!
@@TheHappyCaravan its actually really flavorful and quick and easy
My husband ❤'s butter n herb noodles 🍜 so I make from fettachini noodles on stove (no instapot here yet but want 1😢)❗... Thanks for Recipe 😊
Squeeze a lemon on that even better yummy
You could use the coconut extract in place of vanilla extract❤
I bet that’s yummy!
You can freeze basil and it tastes great! Might take up less room than the pesto!
Yes! I want to do that before it spoils!
I often struggle what to cook for me and my partner. We work long hours, so perhaps meal planning is the way forward!!
As a suggestion, you guys should try Chicken and Chorizo Jambalaya (very little Cajun for the littles and add some tomato puree) then it won't be too spicy ☺️☺️
Thank you! That sounds yummy!❤️
For over 30 years I have referred to a wonderful recipe book titled More with Less. A Mennonite publication I believe.
❤️✌🏻
Do you eat pork . I make a pork chop dinner first layer pork chops then fresh potatoes cubed .. carrots sliced .. green beans .. season to taste slice a onion and top it ...sliced bell pepper.. butter on top about 1/2 cup water or stock..wrap in aluminum foil cook about an hour or till everything is done.. one pot meal
Sarah from Our tribe of many has a rotating schedule of meals. I don’t remember them all but I know there is a Mexican night and a pasta night a pizza night and a Kenyan meal night since her husband is Kenyan and I don’t remember the rest but she says it works for her family.
Yes! I love her meal plan ideas!❤️
Please post your chille cilles recipie please. I know its not spelled right. I tried.
Ok! Yes we eat it for lunch but it’s a simple way to get the family fed!❤️ I found out the correct Spanish spelling is “chilaquiles” and I found some really interesting variations online too. For our family I use 12-18 corn tortillas, 18 eggs, 2 bell peppers, one onion, 3/4 pounds of cheese and two tomatoes. I dry off the tortillas in oil then sautée the onions and bell pepper. I put the eggs in and let them cook slowly, then I add the cheese and let it barely melt, then I turn off the heat and add the tomatoes.
I wish I was good at meal planning cause some nights I’m deciding what I’m making right before I start cooking. I’m good at taking out the meat but what to do with it is where I fall short. An there is only 3 of us and everyone is picky. It drives me crazy
Maybe I missed it but what kind of breakfast things do you prepare??
Sometimes the kids make eggs, breakfast burritos, yogurt, cereal. Sometimes I make a fancy breakfast, sometimes the kids make a fancy breakfast on their own… it’s always creative in the kitchen in the morning.😅❤️
Do u ever just cook a few roast chickens in the oven and lots roast potatoes pot vegetables and gravy i love letting the oven do the cooking
Most people do not have the financial resources to spend on food that you do even if their families are smaller
We can certainly all learn
Learn from you
His bottle is so cute. Can you link it ?
Yes! They’ve lasted forever thankfully! I got him the little ones. They are called baby quoddles

When I was a child, I'd eat half a sandwich, lunch meat, lettuce, one fruit, a boiled egg, box raisins, I didn't like sweets much, we had the real fruit, no fruit snacks, mac & cheese was not boxed.
Albertos😋
If you loved the school lunch? You definitely didn’t go to public school in New York! Lol😂😂😂😂
Would it would be really cold is have you compare living here by showing how much you pay for your house in Bealls and food compared to another state like you said such as San Diego and then just tell her son is an easy living in New York versus San Diego San Diego
Yes! We paid much less for everything back when we lived in San Diego, but part of that is because of inflation!
Your an only child?
Yes!
@@TheHappyCaravan me too. You have my dream life. Being an only child I've always wanted 12 kids. Might not get the 12 but no less than 6 God's Will.
I’ve been bored and struggling to rotate new recipes. This was inspiring😊
In middle and high school our school lunch options included funnel cakes, nachos, mozzarella sicks, stuffed crust pizza. 🥲
