      Thanks brother! Yea this one was a keeper for sure! Lots of leftovers in the freezer! People always ask me how I afford all the food but it’s so much cheaper to do it yourself and we always have great leftovers to thaw out. I’ve saved a ton cooking for ourselves and it’s delicious!

    Now I gotta break out my WSM again. That brisket looks beautiful! Juicy, tender and a nice smoke ring. I see 10, 12+ hour brisket cooks but mine seem to always only take 7 to 8+ and they come out great! I suppose at 300 degrees, a 6ish hour cook is about spot on for time.     Mine is just a basic grill...
    Lovely piece of beef you have there ......
    I always think the key to great bbq is the seasoning and you have used some real tasty ones there...
    It came out so beautifully tender....

      Thanks for watching Margaret. Yes we are fortunate to have a nice grill selection but you can do a lot with a basic grill. I did a six hour pulled beef cook on a regular Weber kettle last week and will put up the video in a couple weeks just to show how versatile they are. Cheers and have a great week!

    Great brisket! Really good for us newbies. My only critique is the background music is too loud, the music overpowers your narrative! I would love to see this video again without the background music.

      Hey thanks Bruce for the kind words and feedback. As I have struggled to learn the editing process many of my videos have suffered with poor quality. I’m much better these days and when I look back on some of those I cringe. I’ll try to find a way to edit that but I doubt it. It was indeed a great brisket though.       Thanks Craig! I love the jealous devil. It burns hot and lasts a long time. I wish I had used the snake method for this though to keep the temp down bit it didn’t seem to matter. Cooked in six hours and came out perfect. Have a great weekend!

      Yea I know it’s hard to find in some parts of the world. Chuck roast can be a substitute. Sort of lol.

    Very juicy looking brisket. Do you think the lump charcoal and how hot it’s been here played into your pit temps? Gonna diva brisket soon - do you recommend seasoning and let it render over night ?

      Yes I made a couple errors. I would snake it next time and probably use more charcoal but I really like that lump. Just do a blend and don’t light so much at once. I’ve heard seasoning too long before can dry it out but this one was perfect. I guess if you have time do it an hour or so before but I usually don’t want to get up at 4 lol.

    Hey at 6:04 when you added in the coal, where did you heat it up? Looking to smoke a brisket for the first time so sorry if it's a dumb question lol. Is there a separate appliance I need to buy in order to heat the charcoal?

      Not a dumb question at all! It’s called a charcoal chimney starter and you can find them at most anyplace that sells charcoal. You don’t necessarily need one you can just put a starter like a Weber cube or a tumbleweed which I prefer under the coals and light it. The chimney just makes it faster.       Lol now you are making fun of me. Use any remote thermometer and follow the advice of hundreds of videos. Keep the heat at 250 to 275 and add fuel as needed. Wrap at the proper.color and bark with butcher paper or foil and cook till probe feels like peanut butter. Let me know how it goes.

    What do you think about using the fire dial for brisket? Haven’t seen any videos on that yet from anyone.

      I don’t think I’ve seen a brisket cook specifically with a fire dial. I’ve been meaning to get one since it came out a couple years ago but probably wouldn’t use it much. I like the way my WSM does brisket as it is. Looks like a great product though. A channel named Phil in Florence (RIP) did some cooks with those a while back. I don’t remember brisket but he showed it being used if you want to check it out. Thanks for taking the time to watch!

    If this is a how to, then what temp was your smoker? What temp was the brisket when you wrapped it?

      Hi Jim good questions. I generally keep all my smoker’s around 250 to 275 for brisket. When the bark is set and the fat is rendering properly I wrap. The temp is usually around 170.

      Gene I appreciate your feedback. Trying to teach myself to edit has been a long process. When I look back at some of those old videos I cringe. Thanks for taking the time to watch and comment. I just retired a month ago and hope to have a much higher quality product.

      That is a great observation! I have always used my water pan and wanted to see if it made a difference. I couldn’t see any negative effects but why not use it. I will from now on. I’ve also heard of people filling it with sand so it acts like a heat sync. I may try that sometime just to see. Thanks for taking the time to watch and I’d recommend the water.
