His damaged brain is too chaotic and Deadpool knows it and relishes in the trolling opportunities.
Its not just his unpredictable fighting style being the reason Taskmaster can't or refuses to copy Deadpool's moves. Deadpool has one of the strongest healing factors and he knows it, so its incorporated into his fighting. And Taskmaster has to be careful because his ability to copy anyone's moves is almost automatic, thus for the same reason why he refuses to copy Moon Knight's fighting style, he does the same with Deadpool. He wouldn't survive the lethal hits, so it becomes a huge liability for him. That is why he fears Deadpool and Moon Knight, he could unintentionally start using their fighting style and before he knows it he is hit with a lethal move that he can't recover from.
