I love that, on the cioppino recipe, you said "don't make things the same way twice; it's no fun!" My (grown) kids love my meatloaf but I NEVER make it the same. I do something different each time I make it!
My Dad had to learn to cook when Mom was ill. His adventures in meatloaf were memorable. I came over to visit and Mom's joke was "he's trying to kill me, look at that meatloaf in the fridge". I saw the new experiment. Dad said he was out of breadcrumbs and didn't have saltines so he tried to recall what his Mom used. Well it was a little quick oats, and darned if that wasn't available except for those little packets. Thank goodness he didn't use that, I give him credit. No he used cream of wheat. I saw this neatly frosted grayish thing on a plate. I asked him he cover it in Cream of Wheat, no it was mixed in and kinda fell out to the bottom so when it was turned out it made a glistening inch thick layer. Almost like a lard frosting. I did taste it and offered to take my parents out to dinner.

I miss being able to make it with everything I catch from going fishing. Unfortunately now I have permanent nerve and muscle damage along with some other stuff so I can't go fishing and camping anymore, I have a hard time doing Simple Things. I also miss being in a professional kitchen, I used to be a chef, cater ,cake decorator ,pastry chef and I make candies but unfortunately now I am a risk and liability😢 it breaks my heart💔😭

As I live on the meditenarean, this is my favourite theme. Especially since I enjoy "non-fish" sea food the most (octopus, squid, crabs, shells...).

I cooked a huge pot of Ciopinno last Christmas. Added fresh chopped fennel bulb in the sauce, simmered on low heat for 45 minutes. Covered, left in the fridge overnight so the flavour came out in full. Next day, reheat the sauce then added seafoods. OMG! It was so good. My family took the whole pot of leftover home.
Omg THANK YOU for that tip on the parsley! You just saved me SOO much time in my prepping! I use parsley in so many dishes and it's the one thing I most dread chopping 😅

Love that you’re using P.E.I. Mussels! I’m from Nova Scotia, which is just a shortish ferry ride away. We also have delicious mussels here too. You’re recipe looks great. I also enjoy these on the beach, with a tad bit of ocean water, wine and garlic cooked over a campfire.
Those mussels look so delicious, and the recipe so quick and easy to make, but I just can't deal with the cooking them alive part. I'm no vegan, but I guess this is where my line goes. Mussels are long lived creatures that can live for decades or even a whole century, and each individual makes just one small delicious bite after the agony of being cooked alive. It's too wasteful. I can deal with it when one cow dies a quick death and then feeds many people for many meals, but this is just... I can't. It's a massacre for a light snack.

The octopus and shrimp made my mouth water, and I've only just finished eating a big pile of prawn and courgette risotto topped with pan-fried sea bass.
Salmon en papillote was once one of my go to dishes. With super thin potatoes, green beans, and the fish (with plenty of butter flavored spray) it's SO good.

re: Cod vs. other types of fish. Cod is the traditional F&C fish. Captain D's, Long John Silver and Arthur Treachers all used it (back in the '60s til sometime in the '90s when cod became more scarce b/c of overfishing due to it's popularity, which led to a doubling in price.) ATs went out of business, while CptDs and LJS switched to haddock (which is close to Cod in flavor and texture) then later to talapia (which is a poor substitute for either one). They have both turned to a type of catfish from VietNam as a cost saving measure. Cod is still available of course, and with the fast food chains switching away from it, Nature is replenishing it.
We love our Cod and Chips in the UK and judging by how that batter turned out in your version wow I could eat that all day. My other favourite is the marinated garlic shrimp looks equally amazing. Good health and Happy holidays..

The best fish-n-chips I ever ate were at a little stand outside the gate at RAF Lakenheath in 1983. It was rainy and cold and that chip stand had the best ever!

I always use a dry white wine for this and I save (freeze) the mussel-stock for use in other dishes where I want fish-stock.

This is great! My favorite fish of all time is cod, being originally from Massachusetts. I love malt vinegar and tartar sauce too. I now live in indiana...don't ask lol but I plan to make a seafood feast on Christmas eve..unfortunately, everything here is frozen, I really miss the fresh stuff. Re: your fish and crisps... LOL! Aussies call them both "chips" which is differentiated with Hot Chips and Dry Chips if confusion arises at "...and get some chips while you're at the shop!"
Cod is a British thing which yanks follow... If one asks for "a piece of fish" in Australia, you'll get Flake [Shark, School Shark, I believe] which is a dry flaky flesh, and very nice...

I feel like, at least in my local chippy, if you say "fish" you'll get haddock. Also, I object to seeing fish and chips served with crisps on a conceptual level.
