Exaggerations aside you kinda have a point though. I feel like my requirements to have meaningful relationships have gone up a lot since I've seen these games. I'm not worried about not having the perfect rich waifu but I do kinda feel bad for not having the deep relationships I would wish to have right now. I don't know if anybody feels the same, I just wanted to blurt that out to see if I wasn't the only one who feels that way

This seems a little backwards... If you say that "yes", you're interested in someone, shouldn't she be curious in who this person could be? And if you say "no", THEN shouldn't she be disappointed?
honestly, if someone says they're interested in somebody to me, I would assume they feel safe telling me because they don't have a crush on me. And if that's what I'm hoping for, I'm gonna be dissapointed
I think it's just Mitsuru suffering from some classic self-doubt. Hearing you say yes to liking someone, she'd probably think it's Yukari for example. Given you're in the same class and have been friendly (or at least friendlier than Mitsuru was to you and the group) for what nearly 8 months. So by saying yes, Mitsuru thinks she's long since missed her chance. But if you say no, despite being around other girls at school all this time, Mitsuru takes that to mean she might have a chance.
It's not too surprising, she admits in her social link that she's very inexperienced with romance. But she also kind of struggles with just having friendly relationships with others. She's quite formal and still refers to most of the group by their last name. She also mentions in her teatime events that she's aware there's a popular opinion that she's difficult to approach. Which I think is why she most likely has low-confidence in this kind of situation, as who'd want to be with someone that people think are unapproachable.

Though I don't think she really talks to them much outside the actual meetings, when she does I bet it'd most likely just be extra talking about what was discussed in said in meeting or other school issues.
