For your balls:
800 g mixed minced meat
1 onion
2 cloves of garlic
some pepper
some salt
15 grams of parmesan cheese
1 egg
45 g breadcrumbs
1 sprig of thyme
10 g baking butter
1 tbsp olive oil
For the tomato sauce:
2 shallots
2 cloves of garlic
5 g butter
1 tbsp olive oil
1 bouquet garnish
½ red pepper
1 piece celery
20 cl dry white wine
¼ chili pepper (seeds removed)
1 tomato
250 ml passata
400 g tomato pulp (1 can)
25 cl of water
½ meat stock cube
1 lump of sugar
some pepper
some salt
Side dishes and finishing:

200 g long grain rice
