    Bontemps Sauce Ingredients
    5.5 tbsp or 77g unsalted butter
    2 tbsp or 25g diced yellow onion
    1/8 tsp paprika
    1 tbsp or 15g Dijon mustard
    3/4 cup or 188ml apple cider
    1.5 tbsp or 12g flour
    1 cup or 250ml chicken broth
    Salt and white pepper to taste
    Makes roughly 1 cup or 250ml

    My aunt was a Michelin star chef who worked with Julia,Jacques,James and Georges. She also taught at UofD before her health declined. I just wish that when I was younger I could have experienced her skills and knowledge of cooking. To me cooking is like a blank canvas and my utensils are my brushes and the ingredients are the paint. I really like your style and love watching you cook.     As a variation, add some tarragon. I haven't quite made this, but a similar "dry wine instead of cider" version and quite liked the addition of tarragon. It should pair with just about any dish you mentioned for this: chicken and fish both pair well.

    Why wouldn't you mount with butter after straining out the onions?

      You probably could, but you would lose most all of that residual heat from the cooking pan --so if you mounted after straining it would more than likely take longer and/or may possibly not completely mount into the sauce.
