  • Gold Medal Salmon Dinner - Fit for a Champion!
    If you’ve been busy working hard or training all day, it’s wonderful to be able to make a quick and easy dinner with good ingredients that support your body’s recovery and fuel it in preparation for the next day. Expert sports nutritionist Nigel Mitchell often uses Thermomix ® to steam a complete meal for the professional athletes he works with, or for his family at home. This one is simple, fast, and fresh tasting. Serves 2 professional athletes - see our tip to serve 4 average appetites.
    150 g white basmati rice
    150 g quinoa
    1200 g water
    70 g broccoli, cut in pieces (5 cm)
    70 g beetroot, cut in pieces (3 cm) or quartered if small
    70 g leeks, cut in slices (2 cm)
    70 g carrots, cut in pieces (3 cm) or halved lengthwise if small
    400 g salmon fillets with skin, 2.5 cm thick
    1 tsp olive oil
    ¼ tsp paprika
    2 pinches sea salt
    6 asparagus stalks
    1 lime, cut in half
    1. Set simmering basket on mixing bowl lid, set Thermomix ® scales to zero, weigh rice then quinoa into simmering basket then set aside.
    2. Weigh water into mixing bowl. Set Varoma dish on mixing bowl lid and weigh broccoli, beetroot, leeks and carrots into it, leaving some holes unobstructed so steam can circulate. Insert Varoma tray. Rub salmon with olive oil on both sides, place skin side down on Varoma tray, sprinkle paprika and sea salt on top of salmon and arrange asparagus around it. Cook 10 min/Varoma/speed spoon.
    3. Set Varoma aside on its upturned lid and add lime halves to Varoma tray. Insert into mixing bowl the simmering basket with rice and quinoa, then set covered Varoma back in position and cook 15 min/Varoma/speed spoon. Serve hot.
    Tips
    Juice from the warm limes can be squeezed over the hot salmon.
    To serve 4 people with average appetites, increase salmon to 600 g, asparagus to 8 stems, and other vegetables to 100 g each.
