Lovely sensible advice! Though I doubt that yummy jam ever got to a year old. Cherries are another fruit notorious for not setting as jam. But I have outfoxed them both. I make Jostrawberry and Jostacherry jam. Jostaberries are blessed not only with divinely rosy red fruitiness, but acid and pectin in abundance to share. The combo jams set beautifully, and taste, more economically, of their luxury ingredient. For over-ripe berries that don't do well in jam, I chop them, macerate with a much smaller amount of sugar until the juice runs, pack raw into small jars, and water-bath at a simmer for just 20 minutes. Superb addition to a tub of thick Greek yoghurt.
