How would I go about a modification for a French seam on the upper? Add another 3-5mm?

Likely 1.0mm thickness but can't remember where he gets his from. I use Ritza Tiger Thread.

Without the fur inlet, would you recommend using another piece of leather instead for the bottom fur and the inside part?
