Try unplugging all the displays and just plug one in (i.e. Player 1 score) and see if that display starts to work, and then do the same for the others to see if its one for more of the displays causing the issue. They all share the BCD output from the MPU so it one of them has failed it could cause all of them to show incorrect characters.
