- Surströmming (pronounced [sʉ̌ːrstrœmːɪŋ], Swedish for "soured herring"), is fermented Baltic sea herring and is a staple of traditional northern Swedish cuisine since at least the 16th century. Just enough salt is used to prevent the raw fish from rotting (chemical decomposition). A fermentation process (which converts sugar to acids, gases and alcohol) of at least six months gives the lightly-salted fish its characteristic strong smell and somewhat acidulous taste.
When opened, the contents release a strong and sometimes overwhelming odour; the dish is ordinarily eaten outdoors. According to a Japanese study, a newly opened can of surströmming has one of the most putrid food smells in the world, even more so than similarly fermented fish dishes such as the Korean Hongeohoe or Japanese Kusaya.[1]
The Baltic herring, known as strömming in Swedish, is smaller than the Atlantic herring, found in the North Sea, and traditionally the definition of strömming (Baltic herring) is herring fished in the brackish waters of the Baltic north of the Kalmar Strait[2] The herring used for surströmming are caught just prior to spawning.
At the end of the 1940s, producers lobbied for a Swedish Royal decree (förordning) that would prevent improperly fermented fish from being sold. The decree forbade sales of the current year's production in Sweden prior to the third Thursday in August. The decree is no longer law, but the trade still abides by the date for the "premiere" - Wikipedia

Sturströmming is absolutely OK. It's like a mixture of salty anchovy & *very* ripe cheese. This is a very helpful video that sums up the important advices: don't open it inside; try to remove the skin and what you don't wish to consume; eat it with butter, bread, potatoes, sour creme and onions; complement it with a pilsner or IPA (or vodka).
Anchovy & cheese doesn't sound soo bad.
Marguerite Reed It’s not bad at all. In fact I eat several cans of surströmming each year because I find it tasty. My main problem is that it isn’t readily available and is somewhat pricey.
It is really nice to see someone who actually enjoy this food with dignity instead of these manhood challenge videos.

Egyetértek a hangvétellel és a megállapításokkal: mi is tettünk egy próbát (készült is videó...), és azt szűrtük le, hogy túlhisztériázott dolog ez. Nem mondom, az első pillanatok valóban váratlanul megrázóak, de egyrészt meg lehet szokni a szagát, másrészt az íze kompenzálható (ahogyan amúgy a svédek és ti magatok is teszitek) hagymával, krumplival stb. Engem amúgy inkább a vérkegyetlen sóssága zavart. Semmiképpen nem finom, nem ízletes, de az öklendezés, üvöltözés stb. túlnyomórészt erőltetett színpadiasság - úgyhogy rakenroll!
