If I was going to run old school pedals I'd go with some MKS Grafight X. I used to have a NOS set still in the box. Someone REALLY wanted them and handed me a pile of cash for them.
Nice Eddie, what build are they going on? Personally once I've done one side I put the bearings in as well on other side on the table top then put it in the vise. Less chance of bearings dropping 👌

Hope you got the right size for the cranks you are using. Can't tell if those look like 1/2" or 9/16". It is not the DX pedals but the SX will look good for now.
Shimano DX and SX use the identical axle and bearing assemblies. Edie, you are a living legend!
