      That sort of thing makes me not feel so bad. I've been failing sideways lately on making proper dumplings. They taste alright, but the skins are still a bit too thick.

      my aunt had a lot of classic recipes but those were lost too. I never got a chance to make a cookbook from her recipes.

      ClassyJohn that’s really sad I’m so sorry. I always urge my family to write down recipes and keep them safe so I can enjoy them and spread the joy to others as well!
      My boyfriends parents don’t write down their delicious recipes either and I keep urging him to get them to write them down!

    It's been my experience that when a recipe says salt it always means table salt... If they want you to use kosher or another kind it's usually mentioned in the recipe.

    Usually when they say "salt",it's table salt. if you use Kosher you need to add 1/4 teaspoon more :)

      I was gonna say the same. Usually if a recipe calls for Kosher salt, it'll specify (well, from the recipes I have seen anyway)

    I have been searching for two years for a recipe for hand pulled noodles. This is the very first one that I feel like I can actually reproduce.

    I have made homemade pasta, most especially ravioli. Everything from scratch is the way to go. Now l feel challenged to try hand pulled noodles.

      Though buying Barilla pasta isn't a big problem. Plenty of working kitchens use it without anyone ever noticing the difference at the table.

      it's honestly a matter of experimentation.
      Try different salts, different flours and ratios and see what works.
      Chinese noodles are a blank canvas, so you can add any broth or sauce you like.
      Searching for recipes can be fun on your own.
      I recommend Strictly Dumpling. Mike doesn't do that many recipes anymore, but he has plenty of good ones there. Sometimes even his travel vlogs can spark inspiration for recipes.
      Chinese cuisine in general is pretty flexible so you don't have to worry about mistakes.

    Thank you so much for making these videos. You’ve taught me so much, and you appreciate the craft and skill that goes into making some food that’s older than some countries.
    I’m sorry to hear your grandpa’s recipe is lost, I know it’s like losing a part of the family along with him when it’s something you really know a relative for, especially when it’s cultural. But you going to the lengths to not only make these recipes but to also practice the traditions that come with them and the authentic hard work and skill does so much to preserve that culture and let people reconnect- I have native friends that grew up with no connection to their culture but are able to find themselves integrating into it via food, thanks to you! And you’ve made it possible for me to feel like a part of cultures I’m disconnected from but have heritage under too. I appreciate you taking time out of your life to do this 🥺💕 it means a lot to me. Thank you.

      hmmmm ramen is a little different. It's a much tougher dough and the resting is necessary.
      I think Emmys noodles were more like biang biang noodles which are much softer.

    LOOOOVE this video. It would be fun to see a follow up where she further refines the recipe and her technique.     I'm so glad you found this recipe!! I have a recipe I've been searching for too. I hope one day I can find it. It was in a recipe book at my mother's house. The recipe book was in the same place for many years. When I tried to retrieve it, it was gone and she doesn't know what happened to it. Needless to say, I was crushed. It had all the recipes that I had made since childhood. I started cooking and baking on my own at the age of 10, but assisted since I was old enough to stand on a chair, lol! I started baking and cooking with my sons, and then my Granddaughter since they were 2 years old and they loved it! My son started teaching his daughter to cook with him since the age of 5. She's 9 now and does very well!! The same for my 2.5 year old Grandson. He's been helping mommy and daddy since he was 1 year of age. Keep up the great work you do Emmy, I Love your videos!!

    Thank you so much I too have been thinking about these noodles for years, though decades longer than you! Have got to a bit of the stretch before but not the taste so your info is great. Lovely to see the fails included and know I am not alone. I've bought t308 flour recently which is German high gluten 20%+ noodle flour . It is also used for super thin stretch pastries like filo.
    Yesterday I used it for a stretched flat noodle like tagliatelli, drying them today to try for tea in garlic sauce

    Of the many things, I have always wanted to do this was never one of them. This mainly comes from watching people who can do it well and those that do it not quite so well. With that being said, you made it look far easier than I thought it could be. Once I get a decent kitchen space this is one thing I may well try because, like you, I just love noodles.
    And other than myself, you are the only person I have seen that gets so excited for the small victories in the kitchen. Thanks, as always, for putting out wonderfully entertaining and informative content.

    Are you sure the low gluten flour has 8g per kg and not per 100g. That would make it only .8%

    Not just table salt, maybe iodized salt? You could ask Mom and Auntie what kind of salt was on Grandpa's table. I would expect that to make a big difference in a chemical reaction.

      it's all about preparation. My kitchen's pretty tiny but I still find workspace :)
      And by tiny I mean two counter-wide workspace separated by sink in the middle.
