It's been my experience that when a recipe says salt it always means table salt... If they want you to use kosher or another kind it's usually mentioned in the recipe.

I have been searching for two years for a recipe for hand pulled noodles. This is the very first one that I feel like I can actually reproduce. Honesty is a very rare and prescious thing on the internet. You are a priceless, rare gem.
it's honestly a matter of experimentation. Try different salts, different flours and ratios and see what works. Chinese noodles are a blank canvas, so you can add any broth or sauce you like. Searching for recipes can be fun on your own. I recommend Strictly Dumpling. Mike doesn't do that many recipes anymore, but he has plenty of good ones there. Sometimes even his travel vlogs can spark inspiration for recipes. Chinese cuisine in general is pretty flexible so you don't have to worry about mistakes.

I was just finished watching Alex channel where he's addicted to ramen and mass produced them. His dough was incredibly tough, though, so he went and broke several pasta maker machines.
hmmmm ramen is a little different. It's a much tougher dough and the resting is necessary. I think Emmys noodles were more like biang biang noodles which are much softer.
LOOOOVE this video. It would be fun to see a follow up where she further refines the recipe and her technique. There's something about seeing her fail a couple times followed by success that makes me want to see how much further she can take it. I love how sanguine she is about her failures. It's genuinely inspiring.

I'm so glad you found this recipe!! I have a recipe I've been searching for too. I hope one day I can find it. It was in a recipe book at my mother's house. The recipe book was in the same place for many years. When I tried to retrieve it, it was gone and she doesn't know what happened to it. Needless to say, I was crushed. It had all the recipes that I had made since childhood. I started cooking and baking on my own at the age of 10, but assisted since I was old enough to stand on a chair, lol! I started baking and cooking with my sons, and then my Granddaughter since they were 2 years old and they loved it! My son started teaching his daughter to cook with him since the age of 5. She's 9 now and does very well!! The same for my 2.5 year old Grandson. He's been helping mommy and daddy since he was 1 year of age. Keep up the great work you do Emmy, I Love your videos!!

Lovely to see the fails included and know I am not alone. I've bought t308 flour recently which is German high gluten 20%+ noodle flour . It is also used for super thin stretch pastries like filo. Yesterday I used it for a stretched flat noodle like tagliatelli, drying them today to try for tea in garlic sauce
You make me desperately want my own kitchen again! Emmy, you ought to try making mead at some point, it's simple as hell (even I can do it) and a lot of fun checking out the results later.
Of the many things, I have always wanted to do this was never one of them. This mainly comes from watching people who can do it well and those that do it not quite so well. With that being said, you made it look far easier than I thought it could be. Once I get a decent kitchen space this is one thing I may well try because, like you, I just love noodles. And other than myself, you are the only person I have seen that gets so excited for the small victories in the kitchen. my aunt had a lot of classic recipes but those were lost too. I never got a chance to make a cookbook from her recipes.

Usually when they say "salt",it's table salt. if you use Kosher you need to add 1/4 teaspoon more :)
I was gonna say the same. Usually if a recipe calls for Kosher salt, it'll specify (well, from the recipes I have seen anyway)
