For pancakes we like using mashed bananas as a substitute, add chocolate chips if you like it extra sweet. Or pumpkin or squash with some cinnamon, nutmeg and cloves for pancakes or waffles- perfect in the fall.

I only have one coffee grinder so when I need it for other things, I grind up a bit of rice, which cleans out the blades nicely.
Never thought of corn bread waffles, the savory sounds delicious. I can see making it for some chilli. Yum

One caveat when using baking powder for instant mixes, it has a shorter shelf life than the other ingredients before 'going flat'. You could wait until you're mixing up the pancakes before adding it or, if you rarely use baking powder in any of your cooking & baking, you could make your own by adding two parts cream of tartar to one part baking soda each time you need baking powder. It's the chemical interaction between the cream of tartar & the baking soda that shortens the shelf life, so keeping the ingredients separate until you're ready to use them eliminates that problem.
I appreciate you so much! Two of my three children are lactose intolerant, and my youngest is allergic to eggs to the point of needing an epipen. This is gold. She hasn't been enjoying pancakes for the longest time because most commercial mixes have eggs or cows milk in them!
I have hens so eggs are not a problem. Good tips for those who dont have eggs.

I use applesauce in place of egg for pancakes
I've done it before. Do you find you have to adjust the flour ratio when you do that? I find I need to add a little more to make up for the moisture I've added with the 1/4 cup of applesauce.

BTW, cream of tartar and soda makes baking powder. Some use arrowroot powder to keep it from clumping up.

Hello, I'm kinda new to your channel. Been binge- watching for just over a month now. I'm also new to watching financesand watching what is going on. Mayo can be used as a substitute for eggs, after all it's eggs, oil and lemon juice mostly.
So a few teaspoons works well.
Yes it's costly to, but so is all those things separately

We have watched and enjoyed your videos for a very long time. Being very senior, so many of your frugal tips were passed down from our parents and grandparents. Having gone WFPB over eight years ago, the egg prices didn't phase us, because we use the substitutes you mention. We batch cook most everything, making meal prep so quick.
We have done cornmeal muffin/waffles for years....the savory one can be changed up so many way (even adding corn, nutritional yeast, green chilies, etc.)
We have found we save a lot by making our own non-dairy milk (mostly oat milk or soy milk....oats & water , or cooked soybeans & water, how simple can it get. the dry soybeans are soaked overnight like other dry beans and keep well in refrigerator.....one cup will make a half gallon of milk!
Very impressed that young Daniel is interested in cooking healthy!

We've been watching Chateaus of France and haven't seen your vlogs for a long time. Then you popped up on UA-cam and we saw you both are still drinking a lot of coffee, but that's good to know because we now know we are right that people that drink a lot of coffee, it's just like doing drugs, it's very addictive. Coffee is a liquid drug and the other drugs you smoke or swallow or use a siringe. So our point is, since we don't drink coffee we save about $300 a year because you also have to use sugar or creamers that a lot of people like and detergent to wash the cups or turn on the dishwasher because you're drinking coffee all day long. Not to mention some people are allergic to coffee and don't know and so have to go to the doctor to get prescriptions and pay to see the doctor, so that's another $500 or more a year because they can't sleep at night from drinking too much caffeine. So seeing both of you have to have coffee to do your shows, you can't wait to drink it in privacy, now we know coffee is a liquid drug and thanks for saving us a thousand dollars a year from not having to see the doctor and have medication because we can't sleep at night. Everyone knows coffee is a stimulant whether it's decaffeinated or not, it has highs and lows because it goes into the blood.

We cook old fashioned oatmeal in 3 mins in the microwave, so easy! Hubs loves pancakes and plans to make this mix, I love waffles, the corn ones sound fantastic!

Yep, aquafaba if thick enough can be used as a binder or beaten like egg whites.
Yes, but in this case I wanted to create a mix without any liquid at all. The liquid in chickpeas is aquafaba. It's generally whipped to mimic the texture of whipped egg whites.

I've never used an egg substitute when making pancakes. It was one of the easiest, simplest recipe to replace the pancake recipe I used before becoming vegan.
I live in Maine and we only have Shaws Hannafords, and Walmart stores to get our food. Also some special Heaith food stores, which are very expensive.
Can you make corn muffins from the corn waffle mix?
I've never tried it, it would probably work.

I found the same egg replacer at Kroger for $1.49. I bought 5 of them. Normally they are around $5. We use them for all kinds of baking. Very handy.
You got a great deal! I checked Amazon and the price has gone up - a lot. Still cheaper than eggs. But, I was bummed.
Best to add the flax right when using as it loses nutritional benefits quite quickly. Within an hour or two.
Putting it in the fridge can help prolong the benefits for a while longer.
Steel Cut Oatmeal is our favorite. It has more fiber and density which makes it the best bang for your nutritional buck. Also, many other health benefits. Oatmeal is good however eggs are a simple nutritious choice over oatmeal. Nutrition
Self rising flour and water makes a decent poor (wo)man’s pancake. Hot water, sugar, and maple flavoring creates a great syrup. 👍🤓

Using regular flour makes them really dense. However, you can use it. Or, you can make your own self rising flour.

Self rising flour is 1 cup all purpose flour and 1 1/2 teaspoon baking powder and 1/4 teaspoon salt. Real self rising flour is made out of a softer wheat. But this recipe works great!❣️😊

Hi Hope, Ireland calling. Did I miss something? Did Daniel cook the blended oats or eat as it was?
In the 70's & 80's my mom would use soy flour as an egg substitute, about a table spoon or so for cake mixes. The only place I can find soy flour is in an Asian market, or on Amazon these days.
Would you please write these ingredients on here for us and the other substitutions you mentioned with adding things to the milk, etc... plz

I have made cornmeal pancakes and will definitely try the cornmeal waffles.
I have used both aquafaba and flax eggs as substitutes successfully. There is no reason to pay such high prices for eggs. We are not vegan, and save our eggs for hard boiled and omelets.
Throw the sugar, cinnamon & dash of salt in the food processor before processing the oats - it breaks the lumps & blends well!

I like to use buttermilk powder for my instant mixes, so that they are “add water only.” I’ll have to do some math to calculate how much buttermilk powder to add.

N.B. If I was as rich as Bill Gates, I wouldn't eat those prepared instant oatmeal packs because they are WAY too sweet. I never liked them. I always use just maple syrup, which I measure so it won't be too sweet. I add a little milk. And if we're being very luxurious, add a scoop of pumpkin multigrain baby cereal. Because I also am too lazy to grind up oats, so I still get that lovely mix of textures. I'm also too lazy to grind flax seeds. I just get the flax seed meal, and sprinkle it on pasta dishes, put it in cheese sandwiches and lots of other savory dishes.

@@Jewelsquiss I am in US in Kentucky cornmeal is finely ground with flour added and has baking powder and salt. Maze is just coarse ground corn
I will be trying those different egg replacers. Is there a shelf stable milk alternative you know of that is not too expensive?
There are dried plant-based milks, but I haven't tried any of them. Except powdered coconut milk creamer. It was pretty good.
You can buy oat flour or grind your own and add it to water. It isn’t great for drinking as-is but works great in cream soups, etc. I could see it working in a “mix” recipe but you will probably need to add more water because the oats thicken up. You can strain the “milk” in a nut bag if you want to try drinking it, but I find homemade oat milk too slimy. There are lots of videos on UA-cam on making oat milk in large quantities. Just divide the oat quantity down to the portions you want.
I guess I didn’t explain how to I calculate mine. The oats I have in the house have have 100 grams per cup. Some only have 80 grams. You basically use one cup of oats for four cuts of water (so 1/4 cup oats for every cup of water - or in my case 25 grams but according to some people, 20 grams). Just read your label and adjust accordingly.
A healthier alternative to white flour is coconut or almond flour. You can also use ground oats to make pancakes. Try stevia brown sugar or stevia sugar alternative sugar-free pancake syrup and sugar-free chocolate chips. We are a no white, flour, sugar-free family. I wish all of you good health.

I use my slow cooker to make overnight outs. It makes enough for an entire week.
I've tried that. Mine sort of got crusty around the edges. But, maybe I should give it another try one of these days.
@@UndertheMedian Add extra water. I add at least 1/2 cup for 1 cup of old fashioned oats. The longer I need to cook them the more water I add. As you well know, the hotter your crockpot cooks the more water you will need. Seems like everyone’s pot cooks differently!

That's all. I promise they come out great every time. I always make them this way.

@@UndertheMedian Hmmm. I'm surprised but yes I think the full fat soy milk could be the answer. And in Australia self rising flour is called self raising flour but I'm sure it's the same..just plain all purpose flour with bicarbonate soda added. If I only have all purpose flour I add the bicarb and they still come out perfectly fluffy. I also find they are best when the batter is thick like custard.
