- A bit unusual as I've put the effort into filming the 'unpotting' rather than actually potting up the orchids.

I put the roots into a bowl of water and find the moss or bark falls out easily from around them. I've not seen anyone else doing this, but it works for me.
Interesting to watch your decisions as to what and why to cut off.

I cut a spend cane that had fully flowered and were leafless. It dropped behind something and found it 7 months later it had 5 keikis! No moss. In an unheated conservatory. South facing.
It almost looks like you did the Momoko in the previous house or when you just got in this one 😁
My notes were vague. (Lots of details were lost when my laptop crashed.) They show I got it sometime in 2019 - no precise date - and the 'date last repotted' was unknown.

You have given me the courage to repot the two biggest nobiles I have, that have so many roots jammed into their pots. Now I won't be scared to cut off those roots that have wrapped themselves completely around the outside of the pot from bottom up!
Keep the best ones - it should be obvious which are the oldest 'tired' roots.

Yes, they can be cut off if you wish.

Yes - I don't use it but many do.
