    they look soo good! the first time i’ve ever had ginger chews was at my grandmas house, and i’ve been craving them ever since- my dad bought me a pack for menstrual cramps and they work wonders

    This is exactly the type of the recipe I was looking for! Tried googling but didn’t find what I wanted. I’ve been eating these store bought ginger candies with tapioca flour so I’m going to do this but with the tapioca I just bought!

    this was so easy, and turned out great! i added almost a tablespoon of ginger juice and filled the rest up with lemon juice! i also used tapioca flour instead and it seemed to work out just the same.

    I love all things ginger. This is a great way to have homemade ginger candy! I thought about using a garlic squeezer to get the juice out. May even chop up bits of ginger and mix them in. How did your beautiful little girl like this candy? To be transparent, I have morning sickness year-round, i.e. getting out of bed. Can't wait to try this recipe. Just what the doctor calls for.

      Kids like anything candy 🍭 even ginger candy 😂 Garlic press may work. I don’t have one because they always break 😅Once you squeeze out the ginger juice, the remaining ginger can taste a bit tough. May just add in small fresh pieces. Do watch for your teeth/fillings! 😀

    Oh wow!!! Excited to try this! I love the gin gin candy but it's expensive. I'm so glad I can make my own!!! Is there a substitution for glutinous rice? Because I have to be gluten free due to my thyroid problems

      Hi Ash! No need to worry : ) Glutinous rice flour is naturally gluten free. Other substitution you can try will be tapioca flour.

      @Ash Chan "Glutinous" also means "glue-like." Glutinous rice, like all rice, has no gluten. You're good to go. And this recipe is fabulous, by the way; I've made it twice and damned near ate the whole first batch myself.

    can you add the minced ginger into the mix and remove the honey as brown sugar would be sweet enough

      For the ginger. Yes, you can just leave it it. I feel the honey makes it a bit softer so may want to leave it in.

    Can I replace the rice flour with tapioca power? If so, would that be the same amount as the rice flour?

      Hi Dear, I haven’t tried with tapioca flour. There was another viewer asked the same question in the past. I believe it should work similar since it is a thickening agent.

    so how long total are we boiling it? I tried it but mine was very sticky and even after freezing was stuck to parchment paper..

    Have you ever used powered sugar to coat the hardened candy instead of corn starch?

    I used white sugar instead of the brown because I didn’t want to have the brown color, but my candy did not set up. Did I not boil it long enough? Can I omit the added water? It sure is tasty. I would like to try it again.

      Hi Petra, I haven’t tried it with sweeteners. Sorry. I have a feeling that it may not work as well because the sugar was providing the structure of the candy. Not sure if xylitol or erythritol will do the same…

    I have tried this 3 times now. every time it get's to stick to handle when removing from parchment. Any tips?

      Hi dear, try coat it with a generous amount of corn starch on both sides. It is a bit sticky to cut. Once cut, coat the pieces with additional corn starch and then shake off the excess.
      Another possible reason would be the temperature of the candy hasn’t reached the hardening stage. Try boiling it slightly longer on the stove. 🥰 Thank you for your feedback.

      You can probably add less sugar and more honey 🍯. I am not sure if it can hold its shape with just honey.

      Hi. Tried this using tapioca flour. Added 1 tbsp but when pouring it got stuck with the parchment paper and it was a total mess. It think it was not thick enough. Any adjustments in the amount of tapioca tapioca flour that will make it better?​@@timeforthymeasianyummy6423

    The taste of corn starch ... having a hard time imagining it as delicious. What would be a suitable substitute ... powdered sugar?

      Hi Sally, the corn starch will prevent it from sticking. Store bought candies sometimes use rice paper but I haven’t found any at local grocery store. You can also wrap each individually with wax or parchment paper to prevent them from sticking.

      Hi Cheenee, I haven’t not tried but I think it should work. With glut rice flour, it is chewy but with tapioca it may be more soft and squishy like Turkish delight 😃

      Hi Myaleeza, it is 1 tablespoon glutinous rice flour during the mixing but you want to mix it in slowly and gradually. At the end it was cornstarch for dusting. 🥰

      Hello Maya! Thanks for your message. When I checked GinGins’ingredients listed on the package, they used tapioca flour which I didn’t have at the time. I assume the tapioca flour will create a better chewy texture and will be more similar to the Gin Gins original ginger chew brand.

      Hi Nikolaj, Sorry to hear that. I boil and reduce the liquid until it forms big sugar bubbles and the consistency looks like honey/molasses and then reduce the heat to low before stringing in the flour. The temperature of the syrup should reach around 230F if you have a candy thermometer. Or if you put a tiny drop of the syrup in a small bowl of cold water, it should form a soft lump and holds its shape.

      Hi Tarnia, I haven’t tried but you may want to coat the silicone with a light layer of coconut oil or similar so it won’t stick. 🙂

    Why oh why won’t my brown sugar melt?? Tried a couple times and both times ended up with grains of flavored brown sugar:(

    Well I made this and honestly I'm so disappointed!
    The chewy part it's actually the sugar getting stuck on your teeth as you chew.
