    Thanks for a great vid and conversation starter here! There seems to be a lot of confusion about bypass. We suggest that "bypass" is uncontrolled and "dilute" is controlled. We have found through extensive R&D that we consistently produced better tasting coffee with a flat bottomed / no-bypass brewer vs any of the popular "cone" drippers. Dilution is totally optional and controlled by the barista to suit the drinkers specific taste! This method also opens more options surrounding "Flash Brew" cold coffees as well...

    I have been really happy with my Bonavita but now think I may need to try a bypass system! My favorite part, though, was your dog! :)

    My recipe for flash chilled iced coffee with the Next Level:
    Coffee 50g
    Ice 270g
    Brew water 560g
    1st bloom: 80g, 60 seconds
    Gentle swirl
    2nd bloom: 80g, 60sec
    Gentle swirl
    1st pour: 200g
    Let it drawn down to ~1/4" over the coffee bed
    2nd pour: 200g
    Same medium grind I use with my Chemex. Due to the long contact time my water is a few degrees less hot to start, and I drop it 5 degrees (F) for the final pour.

    Ha! Our camping brewer is a 50 yo, three piece drip pot which is old school bypass. The bottom looks like a stovetop percolator pot, the grounds basket uses round, flat filters and the top is a cylindrical container with uniform small holes through which the water drips gently onto the grounds. It always produces fabulous coffee. Maybe there are things new under the sun, but this method has been around at least since grandmother's time. I'm going to pull it out and make a pot right now.     I have been using a Swiss Gold brewer for the last few years and it works on a similar basis but has a permanent fine gold filter as well as a "shower" type water dispersal system .

    Really nice! I'm gonna use my Aeropress and try this right now! What would you recommend in terms of grind size? Comparable to a V60? Or somewhat coarser/finer?

    What about the clever dripper? It keeps the water in the coffee grounds until you decide to let the coffee drip out. Also I have been using the aeropress for over 8 years now and I always stir the grounds after putting the water in, let it steep for a time and then pressing. I find I can get a very consistent cup. I also stir the coffee in a malita pour over and then let it drip out. Very consistent brew and no channeling because the stirring insures every thing is saturated.

      Steep and release brewers like the Clever are great! Not quite the same as no-bypass, and there will still be bypass with those.

      Agree. I use Aeropress with the Fellow Prismo attachment, very easy to use, freshly ground coffee plus hot water (I use 90°C), stir for half a minute and press. And very easy to clean as well.

    I like the video content because I love coffee and I enjoy learning about new (to me) ways of brewing it but I also love watches. So I want to ask you what kind of watch were you wearing in this video?

    Going to try out the aeropress method! How have your results on that been using the aeropress no-bypass compared to the NextLevel brewer?

      They've been fairly similar! I've been brewing much smaller batches, around 8-10g of coffee to 160-200g water. Let us know what you think!

      Well, I tried using my aeropress and an espresso basket and wasn't impressed. What grind is recommended? For now I'll keep plunging although I might buy a phin because, you know, I need another way to brew coffee.

      Try a fairly fine grind, aiming for a total brew time of around 5min. It definitely does work better with certain coffees. Happy experimenting!

      I've been using the AeroPress for about a year. I use the upside-down technique. This would be considered an immersion brewing method so you don't have to be concerned with channelling or water dispersion. Most consistent method I've used cos you only have to control brew time as water temperature and grind size are always the same. I would say that it's very similar to an Americano except that the brew does go through a small (inexpensive) paper filter.

      It’s a nice brewer! But definitely not a no-bypass brewer.

      @@steelgtr They should call the Moccamaster the Channelmaster, because that's what it does best (unless you stir the bed a few times through the brew process). There's no way brew water is 100% passing through the coffee bed on a Moccamaster. The kind of filter it uses and water taking the path of least resistance makes it impossible by design. You may not see it happening just under the coffee bed, but brew water is bypassing through the filter, down the sides of the basket and out the bottom. Moccamaster is an incredibly good coffee machine, but in no way could it ever be a no-bypass brewer.

    Great video, except I was waiting for the part when you made a coffee with the Next Level brewer - gutted that you missed that bit out - would have been helpful/interesting to see one made on camera
