I believe vodka in pasta sauce was developed in the 60s in Rome, and it had its moment of glory but was soon regarded as a trendy moment to be rapidly forgotten. That’s why you won’t find it in classic Italian cookbooks.

Sorry Lydia I love almost everything you put up here, but the cream seems all wrong and not very Italian at all. One of the things I hate about American cooking generally - far too much use of cream to give the umami It's totally unnecessary if you are adding Parmigiano anyway. (Italy-loving Brit writing here I guess we are lucky living so close).
