    Paul, I would have thought that they would have Sashimi options, or a no rice option. so the customer gets exactly what they want. (eliminate waste) the thought that I had when you were "waiting" for your food was, what if the reason you were waiting was the rice that you didn't want.
    it still goes to show that no matter how good the process is or how dialed in you think you have there is always a improvement to be made.

      @bigjayrawls Yes, there are options for sashimi only. Just needed to look for the right tab on the menu, I was shocked he wasted so much rice there... :(

    Best is that it was 1000Y per plate. I miss the shrimp avocado sushi so much. Want to got back. I would like to have this same concept with tacos someday!

      Actually, that might be viewed as a waste of sorts. Being reminded of tasty food while fasting forces me to exert some extra discipline (=energy) to not eat, energy that could have been used more productively. I'm an experienced faster so it's no big deal, but even so.

    this looks like eating in a factory. Lean but not cozy.
