I've made flan many many times including in the flanera. One question and one observation. I find that all must no matter what container I use I have lots of hardened sugar left in the bottom of the pan when I flip it over. Some research recently I did led me to believe that I could avoid wasting all that sugar hardened in the pan if I let it cool overnight in the fridge. Any thoughts? the observation is that once I open the flenera fairly quickly after taking it out of the oven and had boiling hot custard spurt across the kitchen. Could have been a horrible accident but I was safe. But you do not mention in your video to let it cool before removing the lid. Any thoughts? Was that just a fluke that I had a near disaster?

I have a question: my mom taught me how to make it many years ago. We would only put it in for about 45 mins. No more than that. She says to put it in for an hr. & 15 mins? Seems like a long time. Also, we never cover it. Can you help me understand this part?
First, love your recipe, love the little details that actually make a big difference. Second, I would add 1/3 of a cup of a very sweet frangelico to the mix.

Hi Diana, I have the same pan and you and I make the same flan recipe. Delicious !! My difficulty is cleaning the Flanera. Can you please tell me how you clean it to get the leftover stuck on sugar out of the pan ? I usually have to boil water and pour it in several times. I feel like it take me forever to clean it. I was originally taught to put the flanera in a large pot, then cook it on the stovetop at 350 F. But doing it that way, the water would boil off, and I would have to add water again - a dodgy practice, since the pot was so hot. If I do bake it in an oven, does the water boil off, requiring water to be added? I haven't seen any recipe video that addresses this. (Note: I do not have a full-size oven, but a countertop unit that still gets the [baking] job done.) What do you think?

Diana, I've followed your Flan recipe and it's great, just one thing: you say to add 1 teaspoon of vanilla extract, but you show a tablespoon when you pour it. I believe you meant to say tablespoon instead of teaspoon. I beg you not to take this as me being a jerk, since I'm sure I make more mistakes than you every single hour, but I just wanted to point it out for the benefit of all concerned. Thanks.
Is the caramel supposed to be hard on top of the flan when it's turned over? I tried this with a regular round cake pan, & the hardened caramel stayed at the bottom of the pan & did not come out on top of the flan. Juices, yes, but not hardened caramel. Thank you!
I've made flan many times and never had hard caramel on the top of the flan. It shouldn't be hardened that I'm aware of. I think what happens during the cooking process is, the caramel melts in the pan with the heat and that's what creates the liquid caramel that covers the flan when you flip it over. Hope this helps.
