    So amazed to see Rambai (Pandan leaf) used, most of the south east countries use it for puddings, we also use in Sri Lankan cooking, I wonder where it began from, Beautiful video of cooking, singing and so lovely to watch you both.

    The Gobind bhog chawal , is called by various names and here in TN it's variant is jeeraga Samba rice.. the same aroma can be experienced. In Assam the joha chawal is famous.. which they use for kheer.... Compared to our payasams the eastern and northern India use less sugar and use the pich of salt technique.. and sticken the full cream milk further , but usp of their kheer is they use a heavy tawa and on it they place the wide vessel and coook on slow fire patiently . And lo.. they use bay leaves too and add the dry fruits cashew and raisins after soaking them in water and not frying them in ghee. Bhogoban ro bhogo toh amruto... Bhogo pora 😁😊😊

    Congratulations for being one of the judges of MasterChef Tamil.
    I have a doubt about this payasam.
    Sometimes when we add jaggery to anything cooked in milk and boiled, it tends to curdle . Many a times it has happened, so please suggest some tips to avoid curdling of any dessert made using milk and jaggery. Thank you.

      If both milk and jaggery are hot..then it will curdle. Here only the milk was hot ..so it shouldn't curdle.

    Namaskaram . Recommend to use stainless steel cooker and vessels or traditional cookware of clay or bronze and avoid Hindalium, which contains aluminium and not health friendly.

    We used pandan leaves in our subzi for taste . But never used in payasam. Nice recipe to try. Also post master chef link or channel details with timing for overseas followers . We try to watch.

      Pandan or rambaibleaf is nothing but screw pine i.e. thazhampoo.
      Tou can replace with thazampoo essense kewra ke jal used for rewari. But add it in lukewarm state of payesh.
