Remoulade, a simple presentation of chilled firm Gulf
shrimp with a mustard-based sauce. Note how quickly
the chef cooks the shrimp: they will be cooked through,
but not overcooked.

This chef blew my mind. I've made plenty of poached shrimp, I never thought about the salt in the water during poaching extracting liquid from the protein (shrimp). But think about things like a marinade or eggs though. Thanks much

🐷 Shrimp Remoulade Pasta Salad:
😇 New Orleans Remoulade Sauce 🍴
1/2 c oil
1/4 c white wine
1 tsp Salt
1/2 Tbsp Sugar
1/4 tsp Pepper
1/2 Tbsp Smoked paprika
1/2 Tbsp Dry mustard
1/2 tsp. Chipotle Chili Powder
1/2 Tbsp Worcestershire sauce
Crab meat
Shrimp
Pasta
Red Bell Pepper
Broccoli
This is the best way to make Shrimp Remoulade.
That looked delicious and I don't even eat shrimp.
Sadly, the work of Chef Leruth is mostly forgotten now.
Can't believe I misspelled his name! That does not comport with his legendary precision...
