This is pure science bro. When you make a hole in the center, the surface area of vade will increase so the heat spreads evenly in all parts of the vade. When it's in spherical shape, the time taken for heat to reach the centre of the vade is more during which the outer crust becomes 🔥 burnt, resulting in burnt outer layer and uncooked core in the center
We tried this recipe as per your measurements and tips. Came out very very good and super tasty.All these days I used to grind the batter for only around 15 mins. And also I used to add few spoons of rice flour. I added the rice flour as per your recipe and ground the batter for 30 mins till it became fluffy. Thanks for sharing your knowledge and experience..
