Dhal puri - Recipe

- Ingredients (makes 12 dhal puri)
Dough
1. 2 lbs flour
2. 1 tbsp baking powder
3. 1 tbsp salt
4. 4 cups of water at room temperature (more if needed)
Dhal
1. 1 1/2 lbs yellow split peas
2. 1/2 tbsp turmeric powder
3. 2 hot Scotch bonnet peppers (or as much as you like!)
4. 12 cloves of garlic (or to suit your taste)
5. 2 tbsp ground geera (cumin)
6. Salt to taste
Cooking the dhal puri
1. 1 1/2 cups canola or vegetable oil (more if needed)
Kneading the dough
1. Place all dry ingredients and water into a large bowl, and begin kneading until all ingredients combine. The dough should not be too soft or too stiff.
2. Place dampened cheesecloth or paper towel on dough and let stand for 45 minutes.
Boiling and grinding the dhal
1. Place split peas in a pot and fill with water (enough to cover peas), and add turmeric powder.
2. Boil dhal on high heat for about 15 minutes, or until peas soften, but are still grainy. Do not over boil or it will be difficult to grind. Then let the boiled dhal cool down before grinding.
3. Using a grinding mill (or food processor), grind the boiled dhal along with the garlic and peppers. Then season the ground dhal with the ground geera and salt.
Loya and filling of loya
1. Place risen dough onto lightly floured surface and re-knead (~ 1 min).
2. Divide dough into about 12 loya (balls)
3. Take a loya and flatten it into a circle.
4. Place a heaping handful of ground dhal in center of the flattened loya. Then pull edges of dough together and twist, and then gently roll to form a ball.
Cooking the dhal puri
1. Place tawa (griddle) on stove top on medium heat and let it heat up until hot.
2. Roll out the filled loya into a large thin circle (big enough for the tawa), and place on hot tawa and cook on that side for ~1 minute; flip the puri and grease with oil, and let cook for ~1min; flip the puri again and grease with oil and let cook for another minute.
3. Serve with delicious tarkari or eat just as it is. - Навчання та стиль

After many failed attempts at making dhalpuri, I was very happy I came up on this recipe by chance and it's by far the best tried and proven my rotis actually swell up just like this. I now consider myself an official Roti maker, thank you!

Great video! Always amazes me how they roll it out so effortlessly without them bursting. That's the trickiest part for me. I've seen two techniques to prevent bursting, but not sure which one is the best: putting flour or oil on dough before filling with split pea mixture. In this video she puts flour on before filling.

I miss dhal puri because I am in the US which I hat and want to go back home and have big foot, chees sticks and eating a hole bucket of mango
Here's a few tips:
-Too much baking powder = stiff. Not enough baking powder, & it won't swell
-Make sure the dough is SOFT when you kneed it. Hard dough=hard dhalpari
-Don't add your water slowly. Add half, mix gently, add the rest, then kneed til it comes together
-Make sure you use enough oil. If you dont, it won't soften & swell
-Make sure the unrolled dough is covered with a towel so it won't dry out
-Don't leave excess flour on the rolled out dhalpari before it goes on the tawa
-Clean tawa

Please be careful and don't let it bust because the steam will surely leave you with a scar for life,very tasty and nice with curry meat (all kind) if you are a vegie it's yummie on it's own,this is so delicious and filling with a maube drink or a solo.

You should get a cast iron pizza pan and season it well. Lodge makes a nice one that is 13 inches diameter.

this is same as maharashtra pooran poli which is sweet.
No that's Rasika Dindial of Trinidad singing.
Thickness: Go as thin as possible, but don't press so hard that the dhal bursts the dough. And don't roll out anything bigger than your tawa.
Water temp: Warm. Cold won't rise, hot will cook the flour.
Don't add yeast.
Longer rest time is good, but if it's not soft when you first kneaded it, it won't soften no matter how long your leave it.

You have to drain the water before grinding the dhal.
you should definitely add a little yeast to the dough so it can rise. otherwise it's a great recipe.

I followed the recipe to a tee however mine came out thick and heavy although it was flexible. What am I doing wrong?
+merle herring After making it to the loya stage allow 20 to 25 mins. before rolling it out (this allow the gluten to become normal) also when rolling concentrate on the thick areas rolling outwards while trying to keep it round. It take some practice to get the hang of it. also try pasting it with clarified butter or coconut oil instead of regular oil for a bit more flavour. good luck.

My first try was not good..It looked like it should, but it didn't balloon or tatse like it should. My wife said it tasted like cardboard..lol..I'll try again another time.. I'm really good at baking bread, so I have no idea what I did wrong.
