    This was yummy and I really enjoyed eating it hot out of the pan. We used chia seeds instead of flax and we had no rise and was gluggy in the middle- don’t think that was due to the chia seeds though (especially given someone else had the same result) but maybe it was.

      add 1 tsp of baking powder to the mixture

    What size is the cast iron pan? I have a 6 inch and a 12 inch pan.

    can you sub a gluten-free flour like oat flour for this?

      I tried using that Cup-4-Cup Gluten Free flour and it was terrible. Everything else was the same, but we got no rise whatsoever and the dough inside was raw.

    This video played on my JetBlue flight. Small correction: the flaxseed is absorbing the water, not “flaxseed absorbed by the water”

    ... I am vegan but I think it would be contrasting and improper to eat pancakes made out of a vegan baby.
