Just roasted a chicken last night! This was a "normal" chicken that weighed 2.5 lbs. Organic. Farm raised. The cashier at the checkout counter said, "Oh, a Cornish hen." I laughed. I told her it's what "normal" chickens used to look like before they pumped up with hormones, antibiotics and bad feed. Interesting butter compound. I've written it down. I live in North Carolina and some of the best chickens come from the mountains. Sadly, many of those small farms have been wiped out by the hurricane. Too sad. It's actually a lot worse than what you see on TV. Will take years and years to repair. Great vid. Thanks for sharing.

Interesting recipe, you did not cook the shallots at all just cooked them in a wine reduction sauce. But the touch with the red onions under the chicken to caramelize them with the garlic is for me once again a first time. I did see many recipes that caramelize the onions but not under a whole chicken. Everything about this recipe was done by a very experience Chef called Joel. Bravo great stuff.
