    📝 Ingredients:
    • 1 kg / 2.2 lb chicken thigh fillets, cut into bite-sized pieces
    • 1 red chili, thinly sliced
    • 3 garlic cloves, minced
    • 1/3 cup ginger, thinly sliced or minced
    • 1/3 cup spring onion, chopped
    • 3 tbsp fish sauce
    • 1/2 cup brown sugar
    • 3 tbs Olive Oil
    • 1 cup water
    • Fresh coriander / cilantro, for garnish
    🍽️ Instructions:
    1. Marinate the Chicken:
    In a bowl, combine the chicken thigh fillets with fish sauce, red chili, minced garlic, minced ginger, and chopped spring onion. Mix well to coat the chicken evenly. Let it marinate for at least 30 minutes (or longer for more flavor).
    2. Caramelize the Sugar:
    Heat olive oil in a large skillet over medium heat. Add brown sugar and cook, stirring constantly, until it melts and turns golden brown.
    3. Cook the Chicken:
    Carefully add the marinated chicken thigh fillets to the caramelized sugar, stirring to coat evenly. Cook for about 5-7 minutes, until the chicken is browned and caramelized.
    4. Simmer with Water:
    Pour in 1 cup of water. Stir well to combine with the caramelized sauce.
    5. Simmer and Finish:
    Reduce heat to low and simmer uncovered for 20 minutes, stirring occasionally, until the sauce thickens and chicken is cooked through.
    6. Garnish and Serve:
    Garnish with chopped fresh coriander / cilantro / spring onion and chilli Serve hot over steamed rice or with your favorite noodles.
    Tips:
    • Adjust the amount of chili according to your spice preference.
    • For a richer flavor, marinate the chicken in fish sauce and a splash of soy sauce before cooking.
