It's week 4 of the Bake the Book challenge and we're sharing this corker of a recipe from the Cookies chapter of the Crumbs book.. The chewy, ginger creams! They're super soft, chewy ginger biscuits, rolled in crunchy brown sugar and sandwiched with a tangy cream cheese frosting - absolutely DELISH!!

GINGER COOKIES
140g soft butter
150g light brown sugar
70g golden syrup
1 egg
225g plain flour
1.5 tsp bicarb
2 tsp ground cinnamon
2 tsp ground ginger
1⁄4 tsp ground cloves
150g demerara sugar
CREAM CHEESE ICING
70g soft butter
Pinch of sea salt
115g cream cheese

Would love a gluten free NYC cookie recipe 🤩
I've made them gf before by just replacing the flour with all purpose gf flour (I use bobs red mill). It turns out just as good as the originals :)
Yummo! But my biscuits didn't end up flat 🙁 I followed the recipe to a tee with the exception of mistakenly only adding 3/4 teaspoon of bicarb (which you'd think would have helped them go flatter). Anything I could change to help with this?
How should the baked cookies be stored if unfinished in one go? As there is cream cheese, I guess fridge? and how many days do they last?

I made these for the first time today. OMG. These are the best ginger cookies EVER!!! I did not have golden syrup. So I used half honey and half corn syrup, they were perfect. I took a double batch to a holiday party tonight and they disappeared!! My new favorite (besides all the NY ones). Thank you Nikki for a fantastic recipe!
I bought Demerara sugar for another recipe a while back here in Australia and it had huge crystals - it looks nothing like here! What could we use instead? It also now explains why my recipe was a suprising disaster as your recipes are always foolproof 😂 (was the cookie dough cupcakes from the Cake Book).
I'm in New Zealand and I wonder if what you got is what we call coffee crystals here? That has very large crystals, great for the edges of slice and bake cookies but yeah, probably not what you wanted here. Can you get golden raw sugar where you are? That would be the nearest thing I think, from my Australasian perspective. Alternatively, you could maybe blitz the large crystals very briefly in a food processor for a smaller crystal - just pulse for a second or two at a time until you get what you want. Could sieve it even after that as the food processor won't break it down evenly.
Oh no!! A granulated sugar would also work really well - basically any corse sugar will work here! But yes as Fiona said, you can always blitz the large sugar crystals in a food processor briefly 👌🏼

I just made these with maple syrup instead of golden syrup, and frankly, this is one of the best things I've ever eaten in a very long time. I can't wait to bring these to the office tomorrow!

But: Mine were'nt as flat as yours when I took them out of the oven. What did I do wrong?
You didn't do anything wrong! Sometimes it comes down to the temperature of ingredients when using them and how cold the dough was when it went into the oven! These make a great, thicker cookie 😍🤤

Either a large or medium egg will work for this recipe, use whichever you can find easily 🤗

@@CupcakeJemma I've seen pictures on Google with batternburg cake slices around the sides, biscuit base, half pink and yellow cheesecake, then either a circle of marzipan on the top or piping with small batternburg pieces. Can we have a video of the NYC cookies being made with a hand mixer, please? I don't have a stand mixer or Instagram but I would like to see what each stage looks like with a hand mixer. Maybe with the new Mini Egg cookie kits (I don't know if you're doing an accompanying video for it)?
Hey Seana, there is already a video up on the channel for the mini egg NY cookies (I believe it was uploaded last year!). Using a hand mixer is exactly the same as the hand mixer, it just takes a little bit longer 😘

Thank you for another amazing recipe! When you do cream cheese based buttercream, you must put it in the fridge to store, yes? Also I always wonder how you recommend storing cupcakes with double cream, curd or custard filling inside when you show those recipes, because even if they got the room temp stable buttercream on top, if the filling is one of these, they would need to be put in the fridge, correct??
Hey Ayaka, we don't store cream cheese buttercream or cupcakes in the fridge here - it doesn't tend to get that warm so they're good in air tight containers at room temp for 3-4 days. Obviously if you're in a really hot country, keep them in the fridge 🤗

Could molasses be used in place of golden syrup ? I think molasses is a common ingredient here in the States for ginger cookies
It would change the taste. Molasses is more bitter and much darker, whereas golden syrup is like the lighter, sweeter version of treacle, which is lighter again than molasses. I'd suggest dark corn syrup if you can get it, or light corn syrup otherwise.
You could use molasses - it will change the flavour significantly! If you have access to a light corn syrup, that would be the best substitute 👌🏼
How many does this make?
Around 15 sandwich biscuits, or 30 regular ginger thins!

@@amandamacleod6200 used dark corn syrup and cut back on the powdered sugar for the filling. these freeze really well just don’t coat in the sugar till your ready to bake

@@CupcakeJemma and @NikkiCoyne; so guys I made them fan assisted and without and I even up the grams to 25 but still the cookies aren't spreading out. The cookie is great but they aren't flatten even putting them langer in the refrigerator or even the amount of an hour. Please Help!
@@janeybakarbessy2330I had the same problem with the NY cookies. I bought an oven thermometer and it turned out that my oven was much hotter than I was setting it to. Once I lowered the heat, the cookies spread.

what can you use in place of golden syrup? thank you for any helpful answers.
You could use a light corn syrup if that's easier to get ahold of! Alternatively you could use honey, however this will alter the sweetness and taste of the biscuit!
