Buffalonian here. Couple suggestions I've found for not having to deep fry. I use a rack on my baking sheet - elevates wings and drains fat. or I use an air fryer which is perfect. Sauce - love yours, also just do various ratios of hot sauce n butter mild 25%/75%, or a 50/50 - many restaurants use a pourable margarine. --- shake n bowl and serve or toss under broiler for a minute or two. Another favorite is a habanero/mango, Honey/mustard. Dipping sauce ----- We use blue cheese chunky dressing, non locals use ranch 🤨 Absolutely loved your salad ---- amazing❣

To be honest I don't have a set time - I prefer my chicken with a " crunchier skin " So I rinse and repeat as needed and eyeball it. I've never burnt them. To sauce you can take finished wings a toss in a bowl n serve or what I do is put back in fryer, increase temp to max ( 450 ) and give em a couple minutes to ( heat, toast, crunch ) sauce depending on the type used. I need well cooked wings, Not soupy sauce and mandatory blue cheese dressing to dip hot wings in. I realize the above sounds complicated - it's not and they turn out so much better then just oven baked. Some recipes will coat with baking powder and such to " crisp " them but that's not my thing. Lower temp, increased time equals a more thoroughly cooked meat - My air fryer has become my goto to for chicken - I do wings, legs, thighs, split breast, 1/2 chickens, whole hens --- all come out perfect. Good luck -- have no fear. Go slower, and you can always increase temp n time as you gain experience. Trust me 😁I'm old, fat and Buffalonian. !!!!

I'm watching you from Germany, I've already cooked your recipes several times. At the chicken, take some large chicken clubs, marinate at will, preheat oven 100 degrees, first bake on the under side 45 min., then turn over another 30-45 min depending on the oven baking, then 200 degrees until it looks very good. You can't imagine how juicy the chicken is, it's worth the time to test it. It also goes a whole chicken, only 2 halves cutting, same cooking time. Thank you for your recipes, I love Russia.

Then add a chopped tomato to give the sauce a 'freshness'. It could be strained, if one preferred, before adding to the chicken. Your coleslaw looked delicious.
