IIRC dark brown sugar contains 2x the molasses that light brown sugar does, so you can substitute 1/2 cup of light brown sugar with 1/4 cup dark brown sugar and 1/4 cup white sugar. It probably wouldn't have made much of a difference in your brine though. An extra teaspoon of molasses in an ocean of brine is basically a rounding error. :)
Love the fridge camera, Alton would be proud! I have used Alton's brine recipe before and I must say your turkey preparation looks exactly like how I did it years ago. I started making a different brine, because I thought the candied ginger addition in Alton's recipe was strange and unnecessary. It's hard to stay well practiced with turkey roasting, but you did a really good job!
I started making stuffing last year and it's my favorite Thanksgiving side to cook now. My favorite Thanksgiving food to eat is pumpkin pie, but none of my other folks like it 😞

I'm not a fan of turkey, I'm a beef guy, but this last Thanksgiving my niece's father-in-law smoked the turkey for us and It was delicious. My favorite Thanksgiving meal was one year when there were only 6 of us (compared to the usual 25+) instead of turkey we had prime rib.

My ex wife's mother once brought home a duck from the market. The only preparation to it was that it had been plucked. The head and feet were still on it and it hadn't been gutted. I ended up having to prepare and cook the whole thing. I'm so glad I'm a vegetarian now and don't have deal with such grossness.

The turkey and the whole table looked beautiful, and your house looked warm and welcoming. I'm sure everyone had a great time. I was also nervous the first time I cooked a turkey, but it all works out in the end, no matter how many years in a row you forget the cranberry jelly.
Of course you're doubly nervous because you are serving a mob, and then comes the clean-up, and the exhaustion, but at the end is this great sense of accomplishment and joy at having made your guests happy.
The best thing about it is that that great feeling at the end is exactly the same no matter how many times you cook that damn bird.
    .......................
Now, I've got a great recipe for leftover turkey soup!

I don't know all the details for the other countries, but I think most countries have a Thanksgiving celebration day, though obviously not based on the pilgrims and native Americans. Just a general celebrating day of giving thanks, some still connected to a certain historic event.

Been using his recipe for years, but I have altered it at this point. It is still the same but I brine longer and don't use the ice water, and I use my fridge.

10:40 glad your not the only one who realises how dirty a sink is. I constantly catch my mum washing some food in the sink, even in the washing up bowl, and the sink is just covered in slimy yuck from having dirty dishes in it and not being cleaned. and yet she always tells me about food hygiene.
i think i'm the only one who takes the bowl out, cleans it, then gives the actual sink a scrub with hot water and soap before washing something in it.

Sam the Cooking Guy on UA-cam, really recommend his channel and I don't cook, had a good Thanksgiving video a couple weeks ago and he had good tips on how to clean the bird (which is how I knew about the giblets) and an interesting method for cooking the turkey evenly so it stays moist and doesn't dry out. i've gotten very into making a good gravy whenever i cook now. you gotta use the neck and the giblets, and the drippings from the turkey. A lot easier if you have a pressure pot, then you can butcher the turkey before hand, remove all the bones, and separate the white and dark meat since they cook at different rates anyway. make a roux from the fat from the drippings, make a nice thick white gravy. Takes the whole meal up a notch. Though i think the gravy ends up being like 1000 calories per spoonful :D

    "Holiday dishes"
Mexico doesn't have a Thanksgiving Day. The Spaniards... let's say that they didn't exactly share the table with native cultures once they arrived here XD. So, after Halloween and Day of the Dead there is not another holiday until December 12th (which has no special dishes) and Christmas.
December 12th is not exactly an official holiday, it's the day where people here celebrate Virgin Mary in its "Guadalupe Virgin" form (I was too lazy to actually look for the accurate catholic church description, so I decided to let it sound as if I was talking of a Pokemon concept XD). Long story short: the story says Virgin Mary appeared to a native man with a darker skin tone than the average representation shows. After some miracles, the native man convinced the local church authorities all the thing was real and a temple was built in her honor. Back here, traditionally, we say Christmas celebrations start that day and extend all the way to January 6th of the follwoing year in what's known as the "Guadalupe-Magi Marathon".
You would say... but nothing happens between December 12th, December 24th, January 1st and January 6th. But not here XD! Because nine days before Christmas (if you like and dare) "Posadas" are celebrated: little traditional recreations of Joseph and Mary asking for refuge in Bethlehem on Christmas Day: families gather or people gather at church, one group gets out and the group inside closes the doors... and then both groups sing a set of traditional questions and answers (obviously, the group outside represent "the peregrines" Joseph and Mary, seeking for refuge for the birth of their son); once all the questions and answers are done, the doors open, the "peregrines" enter (using another song) and then children (and not so children) get to destroy the piñata: a paper or clay container shaped in different forms that has candy and some fruits in it. It could be very well a Squid Game show: one person at a time has to try to hit the piñata and break it with a stick (if you want to get the participant in more trouble you can blindfold him/her and make him/her dizzy turning him around several times... but I should warn you: your personal safety and the integrity of windows and fragile objects will not be guaranteed).
Once the piñata is broken, the candies and fruits fall on the floor... but the winner of the contents is not the one who broke the container: once it is broken it's fair game for everyone who picks things first; Relationships and loyalties disappear at that point :P. And later you can have a small special dinner or snacks for the guests and the posada is done (and then you repeat everything, all over again, the next day until X-Mas). And then on January 6th kids traditionally get another round of toys as surprise gifts in representation of the gifts Christ got from the Magi... yeah, many things still work based on religion around here.
For the Marathon (were you can have as many parties and season dinners almost every day or every week, if your body can cope with it) the traditional dishes would be pozole, "romeritos" (a type of seepweed with mole and potatoes), a dish with cod that... I think it has no special name (at least here, but it's prepared almost everywhere), some pasta as first dish, perhaps some turkey or chicken (in different forms, but not stuffed as in Thanksgiving) and punch as traditional drink, along with beer. And maybe salty, sweet or even spicy "tamales" (corn mass, alone or flavored, sometimes mixed with some protein and/or vegetables, cooked inside corn or banana leafs). Whew... I guess I'll leave it there.
"Cooking in a stove, with tools"
While it's a skill that's needed for survival, specially when you live alone; a long time ago I just decided I'm not fit to cooking in a stove or with fire. That revelation came to me in high school, not cooking but in chemistry lab: once my team ended up exploding a mixture and we had some acidic chemical dripping from the roof... how we got the liquid reach that high I will never know (in loving memory of the jacked I had that day, it took some drips of acid before we noticed the roof was wet).
    "Kosher salt"
Natalie's unwilling incursion into the world of coocking ASMR.
    "Star Wars cooking tools"
Those look great XD. You should have added in your best James Earl Jones impersonation: "You don't know the cooking power of the Dark Side".
    5:14 - "Oh... you're recording... I'm outta here".
"I'm not used to this amount of raw meat/Is this ok for UA-cam?"
Yup, the wonders of cooking and all the related phrases that can be taken out of context XD.
    "Accidental spray"
While it's not part of your brand, that's why you need an apron... or a lab coat (if I decided to finally use the kitchen as it was meant to be used, my first attempts would be with the lab coat :P). In any case, it can optionally say "Stay Golden" even if it's not merch.
"The warm turkey incident" - It's alive! We've seen enough zombie films to know where that could lead to.
17:00 - Coda's like: "But I smell there is more! I want more!" XD.
And that would be it, nice video and Happy Thanksgiving (a couple of weeks later).
If anyone is curious, this is how "asking for Posada" looks like (I picked the first video that was not overly religious): ua-cam.com/video/7vH4Sv81cso/v-deo.html
But, if you don't mind a bit of religious speech, and maybe some untranslated content:
    1) ua-cam.com/video/cCEOVPcIW1I/v-deo.html
    2) ua-cam.com/video/bHUXsyNSQ84/v-deo.html

The main story arc was interesting, as was the overall story and character development. But I was disappointed with the special effects. Looking forward to the sequel. 😏

Great video. However, you do know you aren't supposed to feed dogs thanksgiving turkey. Plain cooked turkey is fine but when you add all the butter, oil, herbs and spices, it can cause digestive problems
