I find it interesting how often you mix your bowls of cream it doesn't thicken to the point where it almost gets crumbly. I am careful not to over whip my cream in the first place, but I still have a problem when adding color that it wants to get to thick. I mostly use the brand "Rich's smooth n ice" cream.

If you don't mind a little bit sweeter cream you can add some powdered sugar to darken it.

does it have to be non dairy or can it be regular too?
You could use the same coloring technique for regular but it would just need to be stabilized before you could decorate with it.

Leave out the green then and maybe add just a little bit of yellow to brighten the color.
