This is pretty much what I do with a MinisForum EM680 (yes, that one ;) ) and a machine upstairs running a Ryzen 7600 and Radeon 7800XT. It's actually decent now that I have replaced my Wifi router with something that has a bit of punch, too. I've only used Steam screen sharing which is a bit more of a faff/restrtrictive, this looks like it might be a bit more tweekable.
Even on a raspberry pi 4 moonlight works great at 1080p over ethernet. I like to use mine to connect to a Hyper-V vm that shares my gpu. Latency is good and just feels like a second pc with a gpu, though alot of anti cheats dont like that :(
Why go for the 3060 instead of the 4060? The power effiency is much better on the 4060, with a tdp at 110w instead of 170w for one. And according to some sources it's overall ca. 80% more efficient.
I tried sunshine during earlier stages of its development, and found the configuration tedious and finicky. Has this changed. I am anticipating having to move to sunshine after nvidia moves to the new app.
@HeliumFreak this was like 2 years ago that it kept breaking on me. I was able to get sunshine going and stable on my ubuntu machine recently and will be moving my other windows PCs by the time the Nvidia App becomes mandatory.
this is a great parental control solution buy cheap Celerons and dump them into all your kids room just turn off the hosting server service during bedtime, exam period, or when they are grounded. BOOM! their favourite gaming device instantly turned into browser only lol

can this handle multiple indie games streaming at the same time with 1 gpu or must it have 1 gpu per running game?
where is your ethernet cable connected to? The host pc or your internet?

What configuration, literally just install the server, give it a server name and password and that's it
