I season the oil before brushng on eggplant. No mess! Saute mushroom 1st and layer baled eggplant slices overlapped in large deep dish pie plate layered with ricotta flavored, sautéed mushrooms with pesto and mozzarella and bake til melted. Mush less time consuming and neater! Super yummy.

I find it so painful to have to waste my time watching these food videos where all vegetables, herbs, meat, chicken are cut up in a slow process!! We all know how to cut up food! Do your cutting up beforehand and put them into individual bowls. Also breaking of eggs! It is so tedious to watch!!
