What about NK cells? Are they p-APCs? and if NKT cells release granules, why they are not granulocyte ?

The distinction between Granulocytes and Agranulocytes is not based on the presence or absence of granules rather it is based on the presence or absence of visible granules.
Agranulocytes also have granules but they are not visible under microscope
