Ok so an alternative recipe would be the Turkish dish called Menemen: stir-fry finely chopped green chili pepper until a little soft add finely diced tomato and cook until the liquid from the tomato evaporates add in eggs and stir until cooked and of course season with salt and pepper It has a much smother consistency and goes really well with bread! :D

Tomatoes as ingredients work incredibly well with eggs. No matter the form the tomato has( sauce, concasse, juice, etc) the combination of eggs and tomato is incredible. Even if you use only sugar, salt, eggs and tomato and nothing else, it will still work. Its incredible what nature can give us without us needing to do much

Made this for my breakfast right after watching. It was absolutely delicious. I've successfully made rolled eggs a couple times now, thanks to your video on that. As well as the french toast! Going to attempt the souffle omelette next ^-^
In Mexico we do a similar dish it calls "huevo a la mexicana" basically we put some serrano peppers slices, chopped white onion and fry it like you do and then put the egg previously cooked with some salt or raw if you want to mix all, and finally add the chopped tomatoes until they left their juice. uwu~ oh this make me hungry😂👌
I do this too but mine's the lazy version. Instead of cooking the egg separately and then adding it again later, I just add the beaten egg directly into the pan after the tomatoes are cooked so it becomes more like an omelette than scrambled eggs. I also use red onions and sometimes ground pork.

I make something similar but it has garlic and jalapenos in it also. I don't cook the eggs separately I add the raw eggs in at 2:28 and scramble them in the sauce. It's much tastier trust me you should try it that way it's so freaking good. You can eat it with rice or just with corn tortillas.
