How to defend against opponent's CM pinged pass to ST? I often see it coming but find it impossible to defend, given that the manual jockeying and interception is so difficult. I think it is even harder to defend than the cut back meta before the patch.

Well as far as I understand we must be rats, otherwise not possible to score if I improvise. That is awful. We(at least 90%) all gonna play the same way. WTF.
Using mechanics yes
In higher divisions it is impossible to win without abusing broken mechanics. The pressure tactics is overpowered. Defenders can't move. No attacking AI for midfielders. Shooting is inconsistent. There is no way to build up properly. What can we do? Just abuse a few broken ways to be able to score goals, i.e. be a rat. I really don't like it. For now I'm still playing just because I like my team, and want to try if I can reach elite division for once. But I am 100% sure I won't continue to play this garbbage game next year. EA sucks.
