I think since you have the pressure cooker, you can cook all the steps using only the pressure cooker. You don’t have to pre-boil the meat at all. After you come to the part of mixing and cooking all the spices and blended chili, then you put the raw beef in, add the kicap pekat etc and lock the lid of the pressure cooker, set it to 1 hr. after that, you can open it and continue adding salt and sugar to your taste. If by then the meat is still not tender enough, you can continue pressure cook it for another 10-15 minutes more.

Depends on what kind of brand dark soy sauce you are using. Most Malaysian dark soy sauces are tick enough and very dark in color especially dark soy sauce brand 'Cap Ayam'. You can also substitute white sugar with brown sugar to make the caramelization much easier. Try to reuse the water that you use to boil the beef if the water is reduced just add more water until you find your tenderness.
To make crispy fried onions, you have to sprinkle a little flour .Some people like to use wheat flour, rice flour, or corn flour. Each has a different texture & unique taste, so it's up to you which one to use
Yes .. make sure the onions are dried from the water after washing before sprinkling with the flour,fire control is also important. Make sure the oil is properly heated but the frying flame is in a medium to large state

Instead of kecap manis, do use dark soy sauce...it will definitely make the sauce darker in colour. If you find using dark soy sauce and the sauce is not sweet enough, do add some rock sugar to sweeten it ^_^. Hope it helps.

Congratulation! Daging hitam look so sedap! When ever i cook curry or any gravy or saucy dish, i will make sure i make extra sauce or gravy. Save in container and in the fridge. Later, i will heat it up and dip my bread or frozen prata in it. Boom!

try kicap pekat ..it is thick dark soy sauce that easily make your dish become dark/black and it is not sweet or salty... therefore you still can add salt or sugar to your dish to fine tune the taste later

Ichang, i want to share some tips. Although in this video you make fried onions but today i want to share some useful tips (petua) how to make anchovy more cruchy. The tip is. Before you fry the anchovy, you need to soak anchovies with hot water around 5 minutes. After that you can fry it. Trust me. It will be more cruchy and less salty.
Good job on this. Brisket is a beautiful cut of meat, no need to boil and rinse so many times as you will loose that great flavor. Use dark soy sauce also known as kecap pekat, kecap manis is too sweet if you use too much. Lots of good advice in the comments. Love you guys! 😊

Different people different style of cooking. My way.. When I cook daging masak hitam i used to marinate the meat first with tabasco black sauce or gula hitam.. Just 1 spoon might do..when cooking then use kicap pekat manis to finish the taste n colour.
If you want to save more time on cooking the meat (this method is helpful with tough meat parts), you can add rooibos tea during the boiling process. Just campak a teabag in it & check the softness every now and then.

Looking very sedap! The 1/3 beef brisket daging hitam meal is more expensive than the RM114 nasi kandar meal. To make it darker just add dark soy sauce. Happy couple is cooking together & eating a lot 💯👍
You can make it darker by using kicap manis and brown sugar. The thick gravy of the daging hitam can be eaten with bread, nasi impit or lemang. Don't throw it away even you don't have beef in it. Keep it.
