I was wondering can I use Deba to flaten (beaten) the fish fillet? I used to use western butcher knife to do so but is it possible for a deba?
I don't see why not, if you're using the side of the knife!

Hey! Im left handed, and i want to buy my first deba knife! Is there any options for left handed people? What kind of things should i look? The knife edge should be in the opposite side of the blade?
Hey Cesar! There are, they are just less common. We do have one in our sale that starts next week. Generally, they are made as a mirror image of a right hand deba.

hmm how do you remove the skin with the Deba? no one wants to eat fish skin
If you're not a fan of the skin, generally you'd remove it with a longer skinnier knife called a yanagiba!
Try filleting a trevally, the scutes are fucking annoying to handle
