Vegetables go in first. You only want the Crayfish to cook no more than 4 to 5 minutes. So, once the vegetables are almost done, put in the Crayfish. By putting the Crayfish in first, you way over cooked the them, which shrinks the meat, makes it tough and some of the flavor is lost to the water. Good luck next time.

I live in Gonzales, Louisiana. I know you know where that is because I've noticed the overpass in one of your videos(blind river video). You did things I thought were odd and thought I would give done tips. Pour the seasoning in the water. Water should be orange. Depending on how much seasoning you use and how long you key them soak will determine the spice. Play with it a little. We do our veggies first. Corn and potatos take the longest so check them here and there to see when they're done. Take them out and add a little more seasoning(again play with it) because all the veggies soaked up what you put in do more is needed. Once boiling, add crawfish. I usually boil for 5 minutes and soak for 30. If you boil for 15 like you did, the tails shrink and you lose meat. The crawfish should be the last thing cooked. I use a 80quart pot. Yours is smaller so you'll have to make extra boils. That's ok, nothing wrong with that. Just keep adding seasoning each time. It takes time to learn how much to put. Play with it and enjoy

I have no idea when I will use that huge 120 qt but maybe one day I will catch enough lol. Next time I do a boil I will try what you have said. There are a few places around Sorrento and Gonzales. If you go out the backside of the Gonzales Wal-Mart where that canal is. Take a left and cross airline. Follow that canal for miles. Throwing a trap here and there. Don't throw right behind Wal-Mart, people fish off the bank there and might steal it. But anywhere across airline is good. I noticed you tied your lines to a tree. That makes it really visible to people. I usually take a 6in rebar and shove it in the ground about 4 inches. Tie your rope to that, that way it's not inviting people to steal/tamper with your traps. Also I've a some good luck down Denver Hurst rd.. Go down Brittany tower rd and turn on Denver Hurst rd. There is a bayou (I think it's the Conway bayou) that follows along the road. Dump a few places around there also. Another thing in this video. I noticed you done a lot of unnecessary prep work to your veggies. We throw our onions, potatos, and garlic whole. No need to cut and peel. Try adding a few other things to see what you like. I use onion, red potato, garlic, mushroom, wieners, sausage, broccoli, cabbage, lemons, and corn. Use a bag of lemons. The lemon juice is what makes the tails easy to pull from the shell. Try this dip also. Equal parts ketchup and mayo with a few splashes of hot sauce(i prefer Louisiana hot sauce, tabasco has too much burn and no flavor) and blend it all together. Dip your tails in it like you would a French fry. Play with different things to find what you like. I don't do real spicy. I don't like my nose to run like a hose pipe but I want done kind of kick.

I am from Louisiana and eat crawfish at least once a week. We use Louisiana crawfish boil seasoning. We also steam them instead of boiling them. Put 1/4 of water in pot, let it come to a boil, put sack of crawfish and a stick of butter. Makes crawfish easier to peel and helps seasoning stick to crawfish. Once 7 mins are up, drain, pour in ice chest, pour layer of seasoning, stir good, close lid for 10 mins. They will finish cooking in the ice chest. No need to season water, only season after cooked in ice chest. We also cook potatoes, corn, mushrooms, onion, lemon in bottom of ice chest, then pour steamed crawfish in top. When you pour out crawfish, corn potato, etc..are on top of crawfish all seasoned. Yummy good cooked the Cajun way!
Them folks in Louisiana maybe forgot to tell you that you purge those crawdads in salt water before you cook them, they puke and crap their guts out, you rinse and boil. you particularly have to do this with ones raised in the rice paddys so they don't taste muddy. Add a bit of sassafras or File as its called down south to thicken that roux boil a bit if you want flavor to stick on a bit of ginger to make it smooth to the stomach b. great vid, you had good luck and i am envious of that deck

I love crayfish very much, but where I catch them (in the nearby creek) after I boil them and eat them I'm getting the aftertaste of how the creek smells lol I know it sounds confusing and weird but its not much of an annoyance because I love to eat them but could you give me any advice on how to rid of the aftertaste? I heard you say you could have used more salt, was that to rid of the aftertaste or something? I live in PA and the ecosystem is very much healthy where I catch them, its away from houses ect. I live in Louisiana and boil crawfish there is no good reason to purge the crawfish It only kills them before the boil now they should be cleaned with several washes of fresh and all the weeds and mud should be removed. The blue streak in the tail is a vein and is fine to eat. Salt should be added at the end of the boil. In the west of Louisiana they throw the salt and seasoning on the boiled crayfish and you get it on the crayfish tali meat with your fingers, I prefer to add the salt to the boil at the end.

Way to go ! I’m from Louisiana , worked lived up here in Fargo since 06. If I may offer any advice, next time, call Louisiana Crawfish out of Baton Rouge and order some real crawfish boil, the medium heat orange powder. Also, bring your water to a boil before adding anything. Put a pinch of vinegar and oil in the water, helps the shells loosen up. Always do your veggies first and put into a cooler to stay warm, so after u boil the crawfish you ice them! When u shock em with ice it helps the shells pop and hold flavor. Before u dump the crawfish lay a head of Colliflower down, it will cook instantly and taste so good! Good luck big guy

In the Carolinas, this is often called Frogmore or Beaufort Stew! If one can't get Crawfish...Shrimp is a convenient substitute. The only thing I would consider differently is not putting the contents on Newspaper, as there are Chemical and Ink Residues. Best thing to use is a very Clean and White Bath Towel...which is very absorbent and easy to shake out and wash afterwards! Great Stuff though.
great video! I live in Utah. We catch a lot of crawfish... I purge with a little bit of salt but mostly corn meal. You can add seasonin with your boil but make sure its not a salty one. I separate the meat after 7 minutes of boiling and put the meat in foil for another 7 min. with ungodly amounts of butter and a little of garlic and siracha. put them on coals for 7 min in foil. best crawfish u everhad

I have never seen anyone outside of Texas/Louisiana try crawfish. I liked in Colorado for about 11yrs and had one Crawfish boil and it didn't go over well. I am glad to see yours was much more successful.
I have better luck catching them in Minnesota than I do in Louisiana. I realize it is my fault I do not catch more down south but they taste good wherever you catch them.
I saw you salted em before hand once with kosher salt. I do at least two sequences of that and flush with water several minutes and make sure I remove all the sediment as this will improve the flavor. Experiment with vinegar, bay leaves, and dill and decide what suits your taste buds. Thanks for the video!!
lived in louisiana for years it's extremely hard to compare or try to copy there recipes with northern type crawdads or any Cajun recipes I have tryed for years can't come close but keep at it and you might find a happy medium ! Great video
As a Texan who very often eats and cooks crawfish you did a good job!! Zatarans shrimp boil (looks like seasoned salt) is by far the best seasoning you can use
Instead of waiting 20 mins dump ice into it, the shock drives the seasonings into the mud bugs, I do recommend some cayenne pepper! Throw some butter in as well,MIT helps the seasoning stick to the bugs as well. Good job though!

Just some experience from me cooking crawfish or low country boil, is to put them in a cooler a couple days before with clean water and that helps flush them out and get some of the Earth type flavor out and really allows the seasoning flavor to take it's place. I also throw the seasoning bags in the water super early before I boil to really get the water seasoned. I also use garlic cloves along with garlic salt and garlic powder. You can never go wrong with seasoning. Looks good for the first shot.
I sure you've gotten plenty of tips but as another Northerner who brought the LA crawfish boil back home, I thought I'd throw a couple of my own in. To get more flavor out of those spice bags you can open them up and grind the contents in a spice (or coffee) grinder. I would make sure to either crush the garlic or, even easier, cut the heads in half and throw them in. The point here is to have the middle open to the water for more flavor. You can also squeeze the lemons then add both the juice and the peal. This gives more lemon flavor that when un-squeezed. Great video! I enjoyed both watching you catch them as well as seeing your family and friends enjoy an activity that I love so much.

Next time try soaking em in water ahead of time and add a little beer to the water when you cook em. I'm not sure what seasoning you added but there are tons of good seafood boil seasonings or Creole seasonings out there.
In Australia we call them Yabbies, usually throw the small ones into a pond and keepthem for bait. Fish like mMurray Cod love yabbie tails or slightly crushed small yabbies. If we have to buy them we pat up to a dollar each. Love your entire series

yeah im with Daniel. ive been a chef (well the degree says I am) for 25 years and have done a bunch with langostino and figured that I could do better and not spend 7.99 a pound. so I thought crayfish. im in northern Virginia and came across your videos which I found much more informative than the majority on youtube. so im off to build some traps and find some spots to catch some. we go to new Orleans every year (for the last 20+) and ive enjoyed the boils ive had there. now to try and perfect this with whatever I can manage to catch. thanks again

I caught them as little pets when I was a child.. put a couple in a jar, give em some bread. They were always dead the next morning ! lol. I researched crawfish eating in NC Wheeler's Crawfish Farm is in Louisburg NC. On website they talk about De-mudding and Purging them before cooking. northcarolinacrawfish etc. they feed them corn and wheat for a day or two to clean them out. Do you think the taste is diff than ones with liver in their bellies? thanks for the vid. might try one day
You make me think about getting some traps, and setting them. I cannot eat that many myself, but there is a bikers chapter here in Stilwell, Oklahoma, I can invite them, and some of the Hammer family over for it.
Looks like your getting the hang of it.. But what we do down in Arkansas is after we cook em' we pour them in a cooler and shake some cajun seasoning on them then toss them around in the cooler then let them stem for 10 mins in there then there ready to eat. Best of luck.
You can buy them online, the one I used here was actually a turkey cooker base. Depending on where you live you can buy them at Home Depot and stores like that as well.

try steaming your crayfish with old bay seasoning, it if you want to stick with zatarans also use their liquid crab boil as well as the powdered seasoning
we use pretty much all that you used there but we also add crab boil to it that is what gives it the flavor your looking for as to the Louisiana flavor from where im from its made by the same people of your spices used but comes in a clear jar and its in a powder that's the only thing you was missing to add to it

Way to go ! I’m from Louisiana , worked lived up here in Fargo since 06. If I may offer any advice, next time, call Louisiana Crawfish out of Baton Rouge and order some real crawfish boil, the medium heat orange powder. Also, bring your water to a boil before adding anything. Put a pinch of vinegar and oil in the water, helps the shells loosen up. Always do your veggies first and put into a cooler to stay warm, so after u boil the crawfish you ice them! When u shock em with ice it helps the shells pop and hold flavor. Before u dump the crawfish lay a head of Colliflower down, it will cook instantly and taste so good! Good luck big guy

In the Carolinas, this is often called Frogmore or Beaufort Stew! If one can't get Crawfish...Shrimp is a convenient substitute. The only thing I would consider differently is not putting the contents on Newspaper, as there are Chemical and Ink Residues. Best thing to use is a very Clean and White Bath Towel...which is very absorbent and easy to shake out and wash afterwards! Great Stuff though.
THE only acceptable substitute for crawfish is... crawfish.

great video! I live in Utah. We catch a lot of crawfish... I purge with a little bit of salt but mostly corn meal. You can add seasonin with your boil but make sure its not a salty one. I separate the meat after 7 minutes of boiling and put the meat in foil for another 7 min. with ungodly amounts of butter and a little of garlic and siracha. put them on coals for 7 min in foil. best crawfish u everhad

My grandad used to be a fisherman,I remember him putting all this shelf fish in a big cage for a whole month, giving them corn.I asked him once why the corn he said.to cleanse their inside.also taste better.wow.thanks grandad.and you gor showing how you catch THEM

I have never seen anyone outside of Texas/Louisiana try crawfish. I liked in Colorado for about 11yrs and had one Crawfish boil and it didn't go over well. I am glad to see yours was much more successful.
I have better luck catching them in Minnesota than I do in Louisiana. I realize it is my fault I do not catch more down south but they taste good wherever you catch them.

I saw you salted em before hand once with kosher salt. I do at least two sequences of that and flush with water several minutes and make sure I remove all the sediment as this will improve the flavor. Experiment with vinegar, bay leaves, and dill and decide what suits your taste buds. Thanks for the video!!
lived in louisiana for years it's extremely hard to compare or try to copy there recipes with northern type crawdads or any Cajun recipes I have tryed for years can't come close but keep at it and you might find a happy medium ! Great video

As a Texan who very often eats and cooks crawfish you did a good job!! Zatarans shrimp boil (looks like seasoned salt) is by far the best seasoning you can use

Instead of waiting 20 mins dump ice into it, the shock drives the seasonings into the mud bugs, I do recommend some cayenne pepper! Throw some butter in as well,MIT helps the seasoning stick to the bugs as well. Good job though!
Nice video, watch the whole thing, especially when you were catching them. Very interesting! If I was makin them I would definitely combined Tamarind Powder for my base for boiling. But overall I like your style. Keep it up!!
It looked very traditional, right down to the newspaper table cloth. Too bad you didn't get to go fishing for them when you were down there last year. I hear they are a lot bigger down south.

I used to catch crawdads in Ohio as a kid and sell them to fisherman, along with worms, grubs, baby mice, frogs...I want to taste this again! haha..thank you for your vid, your humble and real approach means the world...way cool.

Just some experience from me cooking crawfish or low country boil, is to put them in a cooler a couple days before with clean water and that helps flush them out and get some of the Earth type flavor out and really allows the seasoning flavor to take it's place. I also throw the seasoning bags in the water super early before I boil to really get the water seasoned. I also use garlic cloves along with garlic salt and garlic powder. You can never go wrong with seasoning. Looks good for the first shot.

I sure you've gotten plenty of tips but as another Northerner who brought the LA crawfish boil back home, I thought I'd throw a couple of my own in. To get more flavor out of those spice bags you can open them up and grind the contents in a spice (or coffee) grinder. I would make sure to either crush the garlic or, even easier, cut the heads in half and throw them in. The point here is to have the middle open to the water for more flavor. You can also squeeze the lemons then add both the juice and the peal. This gives more lemon flavor that when un-squeezed.

Next time try soaking em in water ahead of time and add a little beer to the water when you cook em. I'm not sure what seasoning you added but there are tons of good seafood boil seasonings or Creole seasonings out there.
In Australia we call them Yabbies, usually throw the small ones into a pond and keepthem for bait. Fish like mMurray Cod love yabbie tails or slightly crushed small yabbies. If we have to buy them we pat up to a dollar each. Love your entire series

yeah im with Daniel. ive been a chef (well the degree says I am) for 25 years and have done a bunch with langostino and figured that I could do better and not spend 7.99 a pound. so I thought crayfish. im in northern Virginia and came across your videos which I found much more informative than the majority on youtube.
so im off to build some traps and find some spots to catch some. we go to new Orleans every year (for the last 20+) and ive enjoyed the boils ive had there. now to try and perfect this with whatever I can manage to catch. thanks again

If you are ever in Sorrento Louisiana which is about 45 minutes west of New Orleans on either 10 or Airline (61) turn on 22 and stop into Reno and Hope seafood and buy a few pounds of their boiled crawfish. They are my favorite. I fly in to New Orleans in 2 days and will be there a week. I may end up buying some Crawfish. I then dream about how someday I may be able to boil like they do. I caught them as little pets when I was a child.. put a couple in a jar, give em some bread. They were always dead the next morning ! lol. I researched crawfish eating in NC Wheeler's Crawfish Farm is in Louisburg NC. On website they talk about De-mudding and Purging them before cooking. northcarolinacrawfish etc. they feed them corn and wheat for a day or two to clean them out. Do you think the taste is diff than ones with liver in their bellies? thanks for the vid. might try one day
You make me think about getting some traps, and setting them. I cannot eat that many myself, but there is a bikers chapter here in Stilwell, Oklahoma, I can invite them, and some of the Hammer family over for it.
Looks like your getting the hang of it.. But what we do down in Arkansas is after we cook em' we pour them in a cooler and shake some cajun seasoning on them then toss them around in the cooler then let them stem for 10 mins in there then there ready to eat. Best of luck.

You can buy them online, the one I used here was actually a turkey cooker base. Depending on where you live you can buy them at Home Depot and stores like that as well.
i like your video it simple but amazing.
To make them come out the shell easier, you can use Wesson oil or what I like is two small little tubs of butter, don't not use margarine!!!!

try steaming your crayfish with old bay seasoning, it if you want to stick with zatarans also use their liquid crab boil as well as the powdered seasoning

we use pretty much all that you used there but we also add crab boil to it that is what gives it the flavor your looking for as to the Louisiana flavor from where im from its made by the same people of your spices used but comes in a clear jar and its in a powder that's the only thing you was missing to add to it
