- These mashed potato fries are a refreshing twist for the classic French fries. Fried mashed potato sticks are made of mashed potatoes, cheese and herbs. These homemade mashed potato fries are crispy on the outside and soft and cheesy from the inside. They are easy to make and perfect as a snack for any meal.

Ingredients;
500g Potatoes
2/3 cup (80g) Cheddar cheese, shredded
1 teaspoon Salt
1/4 teaspoon Pepper
2 Garlic cloves, crushed
1/2 cup (60g) cup Cornstarch
Oregano/Parsley/Coriander or any fresh/dried herbs of your choice (optional)
Directions:
1. Peel and cut potatoes into small chunks.
2. Fill a large pot with water, add 1 teaspoon of salt. Add potatoes and bring to a boil. Cook until fork tender, about 20 minutes.
3. Drain and transfer to a large bowl, add salt, pepper, oregano, crushed garlic and shredded cheese. Mash the potatoes into smooth puree. Add cornstarch and mix/mash.
4. Transfer into a piping bag fitted with a round tip and pipe into long strips (on a cutting board or a parchment paper).
5. If you don’t have a piping bag, you also can divide the mixture into small balls and roll then into a strips.
6. In a wide pan heat oil to 350F (180C).
7. Fry mashed potato strips until golden brown. Transfer to paper towels to drain excess oil.

Instead of piping, it would be easier to line a tray with baking paper, spread the mixture evenly over it, score it with a knife and then place in the freezer. Once frozen, you can lift the baking paper off the tray and the fries will separate like frozen chips and then fry the amount you need. Any excess uncooked fries can be returned to the freezer for use at a later date.
Yea but then you have someone like me who wants the round strips(lk the vid)rather than rectangular ones 😂 so piping using a bag would be best for me 😊

I like this recipe. The end product looks good. But as a chef, there is some of the steps you should change to improve this nice recipe
1) Don't boil potatoes with salt, if you are going to mash them. salt binds the starch in the potato, and can make is gluey
2) This is not a biggie, but mash the potatoes first, then add all the ingrediens after to give a more fluffy mash

Actually #1 is not true. A chef should know better as I was one for yrs. Soaking potatoes in warm water after peeling for 15 to 20mins before cooking actually will release the starch. Then rinse them and boil them with salt. The salt will cook the rest of the starch producing a more creamy and fluffy mash potatoes and season the potatoes of course.

@@sewforlife5728 this isn't true. Using warm water allows for the starch in the potatoes to activate and make it harder to remove from the overall potatoe. Using cold water is better because it easily removes the surface starch without activating it and doesn't mess with the internal starch which is what you want when frying the potatoes to give it the crispness of a French fry

For a healthier alternative, you should be able to roll them into balls, make the fries shape, then pop them into the oven.

Instead of corn starch you can use real bread crumb (soft crumb) not the corners, from toast bread or French sandwich bread inside crumb, 1kg potatoe = 200g bread crumb

I tried to fry mashed potato last week and it was a falilure, it opened when became golden brown and made the oil dirty.
Now I know that I didn't add corn starch.
My first attempt was a fail. Did balls and they poped when left to long but still nice
I make these but with a twist I mix
*chives *Green onion *cheese *bacon
I put all above in blender and add to mashed potatoes and pipe them out like fries above or use the pipe hole for those cookies if in cookie shape I leave a dipped center and cover with mash potato flakes for more flakey crust and use sour cream as dip and put sour cream in center of the cookie type

I wish people would learn to peel potatoes properly. They leave all those nasty bad spots on the potato. That is gross. Cut that crap out. Who wants to eat that. Now why r u using corn starch instead of regular flour?
