Recipe and Ingredients:
2 eggplants
Salt 0.5 tsp
Black pepper 0.5 tsp
basil
olive oil
20 minutes in the oven / 190C / 390f
2 tomatoes
Mozzarella 300 gr
salt
Provencal herbs
Breadcrumbs 2 tbsp
olive oil
Parmesan
15 minutes in the oven
arc
parsley

Looks delicious, and I'll be making this with just one thing different. I'll be putting the onions on top to bake with eggplant to get them to soften and carmelize. Then put the tomato and mozzarella on top! ❤️

Love eggplants and this recipe is quite good ! All ingredients are on point :)!!!
OMG!!! I just made these and they are delicious! And easy to make. I added black olives to the mixture and I really loved them in it. And I added 10 minutes the first time in and five minutes the second time. They really came out soooo good. And so healthy. Thank you I will be enjoying this recipe quite often

Great recipe! Easy to make, not a heavy meal. Goes great with rice. I will be more generous with olive oil salt and herbs mix next time. Also don’t fall for my mistake, i left the eggplants in the oven after first 20 minutes cooking while i was preparing the the topping. And they dried out a bit. It is better to open the oven door or take them out right after the 20 min. Will cook this again, thank you!

Brilliant recipe! I added pesto and cooked buckwheat instead of the bread crumbs. Very delicious 🤤 I love aubergine even more with recipe as it is so easy to cook and I can different things each time
