This chocolate frosting is probably one of my favourite recipes of all time! It is so easy to put together, and has a secret ingredient that really takes it to another level - cream cheese! Cream cheese adds a rich, creamy texture to the buttercream frosting, and you honestly can’t even tell it’s in there, so it doesn’t take away from the chocolate flavour at all! Trust me, it is so yum and you will never go back to regular chocolate frosting after trying this version!
INGREDIENTS:
1 cup (225 g) unsalted butter - room temperature
4½ cups (570 g) icing sugar - also known as confectioners/powdered sugar
1½ cups (335 g) cream cheese - cold, firm type
1½ tsps vanilla
¾ cup (75 g) cocoa powder - unsweetened

Tip: Trying adding the cream cheese as the last ingredient! Cream Cheese contains lots of water and by waiting it minimizes the impact to the structure of the frosting.

Question :- why isn’t the cocoa powder added with the icing sugar? Would this not allow it to be incorporated more easily without risking over beating when adding the cream cheese?

Hi there! Yes that's correct - it'll be fine for half a day or so at room temp but after that it's best to refrigerate it :)

Roughly for how long should I mix after each add of icing sugar. Like is a minute of mixing at low speed enough for each add of icing sugar.

You'll find the added cocoa powder cuts the sweetness
Yess that's right the cocoa powder does cut the sweetness and the cream cheese too :)
I use only a small amount - it definitely gets sweet beyond 1/2 cup for me....
If you don’t mind did you use Philadelphia cream cheese

Hi there! Yess it is :) but will need to be refrigerated overnight because of the cream cheese :)
May I ask what fat percentage your cream cheese is? It is difficult to find fat percentages higher than 27g /100g in Europe
Hi there! The one I use has a fat content of 35g/100g :) you can still use one with a lower fat percentage but just keep in mind the frosting won't be as stable :)

I did use powder sugar once in my butter cream recipe and it turned out grainy
After reading many comments from others no matter the brand it can. I usually sift mine before adding when using a hand mixer but I've also not sifted when using a stand mixer. Either way none of the batches I've made came out gritty. I just made a vanilla version of this 2 days ago. No problem with that one. The only thing I do differently when using a hand mixer is to add it slowly. Basically more than 3 batches. Yes, it takes longer but as I've said. I've had no issues with grittiness. Hope this helps. Happy baking... 😋
Keep mixing longer at high speed... the grittiness will dissapear...

Yes this can be an issue with American buttercream :) in this recipe the grainy texture is minimal as the cream cheese really helps dissolve the icing sugar, but another trick is to mix for a long time (about 10 minutes) as another user has also kindly mentioned, and this will reduce the grainy texture :)

Haha it is! But for the amount of frosting being made it's not too bad, and this frosting itself has less sugar to butter than typical American buttercreams :) it's honestly not overly sweet as the cocoa powder and cream cheese cut through the sweetness :)
